These easy bacon blue cheese burgers are one of my husband's favorite recipes. I use Bubba Burgers for convenience but you could absolutely create your own patties with some grass fed ground beef, salt and pepper.

Ingredients and Substitutions
- Beef Original BUBBA burger® - Im using Bubba Burger because this post was originally a sponsored instagram post but you could absolutely create your own patties if you'd like.
- Thick Cut Bacon - There is no real sub for bacon in this recipe. Leave it off if you don't want it.
- Sweet Onion - The grilled onions add so much flavor but if you don't like them, you could either leave it off or replace it with a slice of heirloom tomato.
- Blue Cheese Crumbles - Since these are blue cheese burgers, i wouldn't recommend a substitution. But to be honest, they'd be delicious with any kind of cheese!
- Hawaiian Burger Buns - Any sort of bun will work in place of these.
- Blue Cheese Dressing - If you don't have blue cheese dressing, you could always go the traditional route and use mayo.
- Arugula - This is my personal fav green for this sandwich but you could also use regular lettuce or even spinach.
- Lemon - You could also use a splash of red wine vinegar if you don't have fresh lemon juice.
- Balsamic Glaze - This is just reduced balsamic vinegar that's sweeter and stickier than its traditional self. You can buy it or make it yourself.
How to make it
Let me tell you how to make these tasty grilled bacon blue cheese burgers!
First, preheat your grill over high heat. Drizzle onion slices with olive oil and a sprinkle of salt.
Once hot, add BUBBA burgers to one side of the grill followed by the onions. Add the bacon to the back of the grill to avoid high heat.
Grill everything for 5 minutes, then flip the burgers and the onions. The bacon takes a few minutes longer, so just flip that once the bottom side is crispy and browning.
Once the burgers are flipped, evenly distribute the blue cheese crumbles on top of each burger and close the lid. Let the cheese melt for 5 minutes.
As the burgers are just about done cooking, add the buns to the grill, interior side down, and toast until golden brown.
Once the burgers are cooked through and the cheese has melted, remove them from the heat and set aside.
To assemble the sandwiches, add 1 tablespoon of blue cheese dressing to the bottom bun.
Then add 2 pieces of bacon that have been broken to fit on the sandwich.
Then add the blue cheese BUBBA burger followed by the whole grilled onion.
Add ⅓ of the arugula to each sandwich followed by a drizzle of lemon juice and balsamic glaze.
Smear the remaining blue cheese dressing on the top half of the bun then close the sandwich up. Enjoy!

- 1 tablespoon Olive Oil

- 1 cup Arugula
- ½ Lemon juiced
- 3 teaspoon Balsamic Glaze
