Ingredients & Substitutions
- King's Hawaiian Soft Pretzel Bites - These mini soft pretzel bites are the best for this recipe but you could use another one of their slider buns if you prefer.
- Mortadella - Feel free to swap mortadella for bologna.
- Provolone - If you don't like provolone, use white cheddar or white american.
- Olive Oil - Any neutral oil will work just fine.
- Dijonnaise - If you don't have dijonnaise, just mix 3 tablespoon mayo with 1 tablespoon dijon mustard - and adjust to your liking. You can also schmear one side of the pretzel bun with dijon and the other side with mayo if you prefer.
How to make them
Making these mini fried mortadella sliders is a breeze! Here's how to do it:
- Prep Pretzel Bites: Slice pretzel bites in half and place on a baking sheet - cut side up. Drizzle with half of the olive oil and place under the broiler for 2-3 minutes or until golden brown. Remove from heat and set aside.
- Fry Mortadella: Meanwhile, get a large skillet heated over medium-high and create little clumps of mortadella with each slice. Add the remaining olive oil then add the clumps of mortadella.
- Add Cheese: Fry for a few minutes on each side until golden and crispy. Top each one with a tiny piece of provolone cheese and then stack two of the cheesy meat piles on top of each other. You will probably need to do this in 3-4 batches.
- Built Mini Sliders: Smear the bottom of each pretzel bite with the dijonnaise then top with a pile of the cheesy crispy meat then put the top of the slider on top. Repeat for all pretzel bites before serving.
- Serve or Save: You can serve immediately with more dijonnaise if you prefer. Although they are best served right away, you can place any leftovers in an airtight container and keep in the fridge for a few days.

- ¾ lb Mortadella thinly sliced
- ¼ lb Provolone Cheese cut into small pieces
- ⅓ cup Dijonnaise
