Leave it to Gwyneth Paltrow to turn a simple breakfast into a flirty flex with her Lemongrass Turkey Breakfast Sausage recipe. Her latest viral “boyfriend breakfast" is packed with flavor, low in fat, and seared to golden perfection. These little glazed patties are perfect for your wellness era and your situationship brunch plans.

Why You’ll Love It
If you’re the kind of person who dreams of sipping green juice while flipping through Goop in an open-air Malibu kitchen—this recipe is your love language.
Gwyneth’s lemongrass turkey sausage is subtly sweet, deeply savory, and full of warm umami flavors from fish sauce, garlic, and sesame oil.
The lemongrass adds that signature citrusy pop that feels fancier than it is (you can even buy it pre-minced at most grocery stores—bless).
These turkey sausage patties are tender and juicy with crispy golden edges from pan-frying in sesame oil, and they go perfectly with everything from jasmine rice and jammy eggs to a crisp thai cucumber salad or buttery toast.
Whether you’re feeding someone special or just treating yourself like the queen you are, this breakfast feels elevated but totally doable.
Plus, it’s high protein, naturally dairy-free, and customizable—hello meal prep superstar!
So go ahead, light your incense, turn on that lo-fi playlist, and pretend you're on the set of a GOOP wellness retreat. Gwyneth (and said boyfriend) would absolutely approve.
Ingredients & Substitutions
This lean, protein-packed breakfast sausage is bright, flavorful, and easy to tweak if needed.
- Ground Turkey Breast: Use a lean, high-quality turkey breast. I've also made this recipe with ground pork and it was AMAZING!! Ground chicken works, too.
- Lemongrass: Adds a bright, citrusy depth that’s hard to beat. You can use fresh stalks (finely minced) or the refrigerated paste (like me!) if you’re in a hurry or can't find it locally. Ginger is another good replacement.
- Scallion: Adds mild onion flavor and a fresh bite. Save a few for garnish if you’re feelin’ fancy. Swap for cilantro if you feel like it.
- Garlic Cloves: Adds depth and classic savory flavor. Jarlic (jarred garlic) works if you're in a pinch.
- Soy Sauce: Brings salty, umami richness. Tamari works if you're gluten free.
- Fish Sauce: The secret to that addictively savory flavor! A little goes a long way. You can skip it if you don't like it or don't have it.
- Honey: Adds a gentle sweetness that balances the salty and savory notes. Could also swap for a tablespoon of brown sugar or a teaspoon of white sugar.
- Kosher Salt: For seasoning. Adjust to taste depending on how salty your soy and fish sauce are.
- Fresh Cracked Pepper: Adds a hint of bite and heat.
- Sesame Oil: Used for frying and flavor. Adds a nutty richness and helps create a crisp exterior.
How to Make It
These pan-fried turkey sausage patties come together fast and taste like something you’d order at a chic brunch spot.
- MIX THE SAUSAGE: Add the ground turkey, lemongrass, scallion, garlic, soy sauce, fish sauce, honey, salt, and pepper to a large bowl. Use your hands or a spoon to mix everything together until evenly combined.
- FORM THE PATTIES: Shape the mixture into small 3x3-inch patties. Aim for 8 to 10 total. They’ll firm up as they cook, so don’t stress if they feel a little soft and loosey goosey.
- HEAT THE PAN: Add sesame oil to a large cast iron skillet over medium heat, just enough to coat the bottom of the pan.
- FRY THE SAUSAGE: Add the patties in a single layer without overcrowding the pan (you may need to do two batches). Cook for about 3 - 4 minutes per side, or until golden brown and cooked through.
- SERVE: Plate the sausage patties and top with more chopped scallions for that extra pop of freshness.
- SAVE: Leftovers keep well in an airtight container in the fridge for 3–4 days. Reheat in a skillet or microwave and serve with eggs, rice, or tucked into a wrap!
