Ingredients & Substitutions
- Gnocchi: A package of potato gnocchi works beautifully for this sheet pan dinner. You could also swap for cauliflower gnocchi for a lighter version or even try baby potatoes.
- Baby Bella Mushrooms: These mushrooms bring a rich, earthy flavor, but feel free to use another variety. White button mushrooms or even sliced portobellos work as well.
- Tomatoes: I used whole grape or cherry tomatoes for a burst of sweetness and juice. Feel free to substitute with diced Roma or heirloom tomatoes if that’s what you have.
- Onion: A thinly sliced large onion adds sweetness as it roasts. Red onion or shallots would also work well for a slightly different flavor.
- Garlic: Freshly grated garlic gives an aromatic, savory kick. If you're in a pinch, garlic powder, onion powder, onion flakes or pre-minced garlic can be used as a shortcut.
- Italian Seasoning: This blend is a staple for Italian-inspired dishes, but if you don’t have any, no stress! Try using a mix of dried basil, oregano, and thyme. You could also add a little bit of optional red pepper flakes for added heat.
- Dry White Wine: The wine adds depth, but if you’re avoiding alcohol, replace it with chicken or vegetable broth.
- Olive Oil: A quality olive oil helps everything roast beautifully, but if you prefer something different - no worries! You can swap in avocado oil or melted butter for a different flavor.
- Fresh Rosemary: If you're not a fan of fresh rosemary, you can use other fresh herbs like thyme and sage.
- Jimmy Dean Sage Sausage: The sage pork sausage is herbaceous and flavorful and one of my favorites during Fall. Italian sausage, spicy sausage, chicken sausage, turkey sausage or even beef sausage work well, too. I recommend using crumbled over italian sausage links since the rough edges give you more crispy meaty bites.
- Gruyere Cheese: Gruyere melts perfectly and adds a rich, nutty taste. You can sub with parmesan cheese, Fontina, mozzarella, or sharp white cheddar if needed.
- Balsamic Glaze: A drizzle of balsamic glaze finishes the dish with a tangy sweetness. You could also use a high quality aged balsamic vinegar or a simple balsamic reduction works in a pinch.
- Optional Additions: This easy dinner recipe is also delicious with with other veggies, too! Try brussels sprouts, broccoli florets or other root veggies like sweet potatoes, red potatoes, baby carrots, bell peppers (yellow, orange, red bell pepper or green bell pepper), or even green beans. If you're using other vegetable options, just make sure you chop the heartier veggies into small pieces. This will help them stay on the same cooking time as the other ingredients.
How to Make It
This sheet pan meal is bound to be a weeknight winner—minimal effort, maximum flavor, and practically zero cleanup! Here's how you do it!
Prep the Oven: Start by preheating your oven to 425°F. Grab a large sheet pan, and get ready to bring all these flavors together. I do not recommend using parchment paper since we'll want the metal from the pan to react with the ingredients. In addition to that, Aluminum foil is great for easy clean up. But not so great when you need to toss things around like you do in this recipe.
Assemble the Ingredients: The first thing we're going to do is get a variety of vegetables ready! No need to get a large bowl out - we're going to make this easy dinner recipe right on a sheet pan. On a large baking sheet, add gnocchi and your favorite vegetables. I'm using sliced baby bella mushrooms (pre cut veggies are a godsend for this recipe!), whole cherry tomatoes, thinly sliced onions, and grated garlic.
Add Seasoning & Sausage: Add the Italian seasoning, a dash of kosher salt, and drizzle on some olive oil. Toss it all together to coat everything then pay it down to create an even layer. Then pull apart the sausage into tiny pieces and place on top. Pour the wine over everything and finish with a sprinkle of fresh rosemary.
Bake: Pop the pan into the oven and roast for 20-25 minutes, or until the tomatoes start to blister and brown, and the sausage gets that crispy edge we love.
Add the Cheese: Remove the sheet pan and toss all of the bite-sized pieces together. Pat everything back down to a single layer, and sprinkle the shredded Gruyere on top. Return to the oven for a few more minutes, just until the cheese has melted to perfection.
Finish and Serve: Take it out, drizzle with balsamic glaze, and finish with flaky salt and freshly cracked black pepper. Serve hot and enjoy that cheesy, cozy goodness in every bite!
Save: You can place any leftovers from this delicious recipe in an airtight container for 3-4 days.

Sheet Pan Sausage with Veggies and Gnocchi
Ingredients
- 1 16 oz package Gnocchi
- 1 8 oz package Sliced Baby Bella mushrooms
- 1 10 oz package Grape Tomatoes
- 1 large Onion thinly sliced
- 2 cloves Garlic grated
- 1 teaspoon Italian Seasoning
- ¾ cup Dry White Wine or one small can
- 2 tablespoon Olive OIl
- 1 teaspoon Fresh Rosemary
- 8 oz Jimmy Dean Sausauge (half a roll)
- 6 oz Gruyere Cheese shredded
- Balsamic Glaze
- Kosher Salt and Pepper
Instructions
- Preheat oven to 425 degrees.
- Add gnocchi, mushrooms, tomatoes, onions and grated garlic to a sheet pan.
- Add italian seasoning, kosher salt and olive oil on top and toss to coat.
- Pull apart the sausage into tiny pieces and place evenly across the top of everything. Then pour the wine over the top and finish with a sprinkle of fresh rosemary.
- Place in the oven for 20-25 minutes or until the tomatoes are starting to brown and the sausage is crispy.
- Remove from heat, toss everything together, then add cheese on top.
- Place it back in the oven for a few more minutes or until the cheese has melted.
- Remove from heat and serve with a drizzle of balsamic glaze, flaky salt and fresh cracked pepper.
