Sheet Pan Sausage with Veggies and Gnocchi

This sheet pan sausage with veggies and gnocchi recipe is one of my favorite 30 minute dinners. It's super flavorful, easy to throw together, and is perfect for busy weeknights where you just want something warm and cozy.

Ingredients
  

  • 1 16 oz package Gnocchi
  • 1 8 oz package Sliced Baby Bella mushrooms
  • 1 10 oz package Grape Tomatoes
  • 1 large Onion thinly sliced
  • 2 cloves Garlic grated
  • 1 teaspoon Italian Seasoning
  • ¾ cup Dry White Wine or one small can
  • 2 tablespoon Olive OIl
  • 1 teaspoon Fresh Rosemary
  • 8 oz Jimmy Dean Sausauge (half a roll)
  • 6 oz Gruyere Cheese shredded
  • Balsamic Glaze
  • Kosher Salt and Pepper

Instructions
 

  • Preheat oven to 425 degrees.
  • Add gnocchi, mushrooms, tomatoes, onions and grated garlic to a sheet pan.
  • Add italian seasoning, kosher salt and olive oil on top and toss to coat.
  • Pull apart the sausage into tiny pieces and place evenly across the top of everything. Then pour the wine over the top and finish with a sprinkle of fresh rosemary.
  • Place in the oven for 20-25 minutes or until the tomatoes are starting to brown and the sausage is crispy.
  • Remove from heat, toss everything together, then add cheese on top.
  • Place it back in the oven for a few more minutes or until the cheese has melted.
  • Remove from heat and serve with a drizzle of balsamic glaze, flaky salt and fresh cracked pepper.
