Mini Fried Mortadella Sliders with Provolone

These little cheesy fried mortadella sliders are based off of Anthony Bourdain's favorite sandwich. They're the perfect sweet and salty appetizer for any get-together.

Ingredients
  

  • 1 tub King’s Hawaiian Soft Pretzel Bites
  • 2 tablespoon Olive Oil divided
  • ¾ lb Mortadella thinly sliced
  • ¼ lb Provolone Cheese cut into small pieces
  • cup Dijonnaise

Instructions
 

  • Slice pretzel bites in half and place on a baking sheet - cut side up. Drizzle with half of the olive oil and place under the broiler for 2-3 minutes or until golden brown. Remove from heat and set aside.
  • Meanwhile, get a large skillet heated over medium-high and create little clumps of mortadella with each slice. Add the remaining olive oil then add the clumps of mortadella.
  • Fry for a few minutes on each side until golden and crispy. Top each one with a tiny piece of provolone cheese and then stack two of the cheesy meat piles on top of each other. You will probably need to do this in 3-4 batches.
  • Smear the bottom of each pretzel bite with the dijonnaise then top with a pile of the cheesy crispy meat then put the top of the slider on top.
  • Repeat for all pretzel bites before serving.
