- Peaches: Feel free to swap the peaches out for another delicious stone fruit of your choice. It's also great with necterines or plums.
- Honeydew: Not a fan of honeydew? Feel free to swap it for seedless watermelon or cantaloupe.
- Cucumbers: I think cucumbers add a crisp texture that is so delightful. But if you have an aversion, you can leave them out.
- Pickled Red Onion: My recipe for pickled pink onions have a sweet and tart flavor profile that is absolutely delicious in this summertime fruit salad. You could also substitute them for thinly shaved shallots if you don't do onions.
- Peppadews: If you don't have peppadews, you could use thinly sliced chili pepper or even pickled jalapeno!
- Feta Cheese: If you're not a fan of feta cheese, you could use halloumi or queso fresco.
- Fresh Mint: Basil, cilantro or mint is ideal.
- Extra Virgin Olive Oil: I recommend a high quality finishing oil that's fruity and bold.
- White Balsamic Vinegar Glaze: I used a grapefruit white balsamic glaze but that might be hard to find.
- Flaky Salt: Kosher salt is also ideal.
- Fresh Cracked Black Pepper: You might think pepper on a fruit salad is a bit odd but trust me on this one. It's so good and adds so much flavor.
How to Make it

All you need to do is chop up your ingredients and add them to a large bowl.
Add olive oil, white balsamic vinegar glaze, salt and pepper along with half of the feta and toss it all together.
Let it sit in the mixing bowl for 20 minutes to let the natural juices come together.
Add ingredients to a serving platter or salad bowl and crumble the remaining feta on top.

- 2.5 cups Peaches (about 2 large peaches) cut into bite sized pieces
- 2.5 cups Honeydew cut into bite sized pieces
- 4 small Persian Cucumbers cut into bite sized pieces
- 2 tablespoon Pink Pickled Onions finely diced
- 2 tablespoon Peppadews finely diced
- 2 tablespoon Extra Virgin Olive Oil
- 2 tablespoon White Balsamic Glaze
- 2 tablespoon Fresh Mint finely minced
- 6 oz Feta Cheese divided and crumbled
- ¼ teaspoon Kosher Salt
- Fresh Cracked Pepper
Instructions
- Add all of the ingredients and half of the feta to a large bowl and toss.
- Let it rest for 20 minutes for the natural juices to come together.
- Toss once more and place on your serving platter or bowl.
- Top with remaining feta and serve.
