Ingredients and Substitutions
SAUSAGE GRAVY
- Jimmy Dean Spicy Sausage - Jimmy Dean Spicy Sausage was what my Grandma ALWAYS used so I recommend using it, too! If you have to use their sage or regular sausage, that's fine too - it just won't be as flavorful.
- Flour - You can use self rising or all purpose flour.
- Half n Half - This recipe works best with half and half but you could absolutely use whole milk.
- Kosher Salt & Pepper - No real subs here - just make sure to use kosher salt when cooking most recipes.
TO SERVE
- Honey Butter Biscuits - My Honey Butter Biscuit recipe is also from my Grandma and let me tell you, it's perfect with this recipe. But if you don't have time to do all of that, you could absolutely use store bought - no shame in my publix game!
- Pink Pickled Red Onions - This pickled onion recipe is another recipe from my blog that really heightens the delicious ness of this dish. Again
- Scallions - These are optional but they really make a drab plate of beige look and taste delicious!
- Franks Hot Sauce - This is the OG way I like to serve it. But as always, use whatever hot sauce you adore!
How to make it
Making my Southern Meme's Sausage Gravy and Biscuits is so easy! It was actually one of the first recipes I learned to make so I'm confident you can do it, too!
Begin by adding 1 lb of sausage to a cast iron skillet (im using my @ourplace cast iron and love it!) over medium high heat. Use a spatula to break up the sausage into tiny bits.
️Once it’s crumbled and cooked through, add the flour and stir - making sure that the flour evenly coats the meat. Cook for 2-3 minutes until flour taste is cooked out.
Add half n half and scrape the bottom of the pan to get the little tasty bits back into the gravy.
Let simmer and bubble for 3-5 minutes until thickened. Taste and season with salt and pepper
At this point it’s ready to serve, but if it thickens up before the biscuits are ready, you can loosen it with some more milk or a tiny bit hot water.
When you're ready to serve it, grab some bowls and ppoon gravy over split biscuits and top with scallions, pink pickled onions and hot sauce!

Frequently asked questions
What makes sausage gravy taste better?
To kick your sausage gravy up a notch, try adding a pinch of something fragrant like thyme, cayenne or a dash of smoked paprika – it's like a little flavor firework in your mouth! You could also try a splash of coffee or Worcestershire sauce or a tiny spoonful of Dijon mustard for that deep, savory umami goodness that'll have everyone asking for seconds.
How do you thicken sausage gravy?
Got a sausage gravy that's feeling a bit too thin? Thicken it up by whisking in a bit more flour to your roux at the start, or stir in a slurry of cornstarch and cold water towards the end of cooking – it'll go from runny to wonderfully rich and creamy in no time!
How do you keep sausage gravy from breaking?
To keep your sausage gravy from breaking, the secret is all in the simmer – gently cook it on low heat and avoid letting it boil, because slow and steady wins the rich and creamy gravy race! And remember, stirring it occasionally with love is the key to keeping that smooth, velvety texture.
