Although you can totally pick whatever spices you prefer, I always infuse mine with a mix of fresh thyme, kosher salt and French onion soup seasonings.
Once it's all in the crockpot, just let those babies slow-cook till they're tender and dripping with gooey cheesiness.

Ingredients and Substitutions
- Salted Butter - No big deal if you want to use cooking spray, oil or nonsalted butter here - it'll still work perfectly!
- Frozen Shredded Potato Hash browns - I got these 20 oz bags at Trader Joe's but you could definitely use another brand. As long as they equal out to about 30-40oz, youll be good to go!
- Sour Cream - You ould also use mayo or a can of condensed soup (think cream of chicken, onion, celery or even mushroom) if you don't want to use sour cream.
- French Onion Soup Mix - Swap out the french onion soup mix with a packet of ranch seasoning if you want to try something new.
- Half and Half - You could also use buttermilk, heavy cream or even whole milk.
- Trader Joe's Unexpected Cheddar - Really any cheese blend will work just fine! I recommend unexpected cheddar because it just has a little more deliciousness than traditional cheddar. You could also try gruyere, fontina, havarti or another easily melting cheese.
- Fresh Thyme Leaves - You could also use dried thyme or even herbs de provence, rosemary or italian seasoning. Totally depends on the vibe you want to go with!
- Orange Sharp Cheddar - I like to finish the dish with a traditional orange cheddar because I think the color looks more appetizing in the crockpot. You could absolutely use another cheese of your choice if you don't care about aesthetics.
How to make it
Making cheesy potatoes in the crockpot is super easy!
To begin, you'll just want to grease the inside of the crockpot with some butter to help the potatoes not stick to the walls.
From here on out, it's all easy peasy!
Just add all of the ingredients (besides the 2 remaining cups of orange sharp cheddar) to the crockpot and stir.
Place the lid on top and cook for 4 hours on high heat - stirring about 2 hours in.
10 Minutes before the 4 hours is up, stir in 1 cup of of the remaining cheese.
Then add the other cup on top for a cheesy layer of goodness.
Place the lid back on and cook for 10 more minutes or until the top layer of cheese is melted.

- 8 oz Sour Cream
- 1.4 oz French Onion Soup Mix
- 2 cups Half and Half
- 2 cups Trader’s Joe's Unexpected Cheddar shredded (or gruyere or sharp white cheddar)
- 1 teaspoon Fresh Thyme Leaves leaves only
- 2 teaspoon Kosher Salt
- 2 cups Orange Sharp Cheddar
Instructions
