Cheesy French Onion Crockpot Potatoes

This easy crockpot cheesy potato recipe is perfect for an easy weekend brunch or a thanksgiving dinner! All the ingredients get thrown into the crockpot and slow cooked for 4 hours.

Ingredients
  

  • 1 tablespoon Salted Butter
  • 40 oz Frozen Shredded Potato Hashbrowns (it will work with 30oz of potatoes, too - just remove ½ cup half and half)
  • 8 oz Sour Cream
  • 1.4 oz French Onion Soup Mix
  • 2 cups Half and Half
  • 2 cups Trader’s Joe's Unexpected Cheddar shredded (or gruyere or sharp white cheddar)
  • 1 teaspoon Fresh Thyme Leaves leaves only
  • 2 teaspoon Kosher Salt
  • 2 cups Orange Sharp Cheddar

Instructions
 

  • Use 1 tablespoon of Salted Butter to grease the inside of the crockpot.
  • Add all ingredients (besides the 2 remaining cups of orange sharp cheddar) to the crockpot and stir.
  • Place the lid on top and cook for 4 hours on high heat - stirring about 2 hours in.
  • 10 minutes before the four hours is up, stir in 1 cup of of the remaining cheese and then add the other cup on top.
  • Place the lid back on and cook for 10 more minutes.
  • Season with salt and pepper before serving if needed.
