Cheesy French Onion Crockpot Potatoes
This easy crockpot cheesy potato recipe is perfect for an easy weekend brunch or a thanksgiving dinner! All the ingredients get thrown into the crockpot and slow cooked for 4 hours.

1 tablespoon Salted Butter 40 oz Frozen Shredded Potato Hashbrowns (it will work with 30oz of potatoes, too - just remove ½ cup half and half) 8 oz Sour Cream 1.4 oz French Onion Soup Mix 2 cups Half and Half 2 cups Trader’s Joe's Unexpected Cheddar shredded (or gruyere or sharp white cheddar) 1 teaspoon Fresh Thyme Leaves leaves only 2 teaspoon Kosher Salt 2 cups Orange Sharp Cheddar
Get Recipe Ingredients
Use 1 tablespoon of Salted Butter to grease the inside of the crockpot.
Add all ingredients (besides the 2 remaining cups of orange sharp cheddar) to the crockpot and stir.
Place the lid on top and cook for 4 hours on high heat - stirring about 2 hours in.
10 minutes before the four hours is up, stir in 1 cup of of the remaining cheese and then add the other cup on top.
Place the lid back on and cook for 10 more minutes.
Season with salt and pepper before serving if needed.
