This smash burger grilled cheese recipe is so dang decadent it'll make you swoon! Made with a garlic truffle mayo, a crispy smash burger patty, caramelized onions and lots of gouda cheese, it's simply irresistible!

What is a Truffle Smash Burger Gouda Grilled Cheese
This ooey gooey grilled cheese is the epitome of decadence!
It's made with Roth gouda, which is made in Wisconsin and melts like a dang dream. It's rich and buttery and absolutely perfect for a grilled cheese.
Then you add sweet caramelized onions, a quick and easy fragrant garlicky truffle mayo, and a umami-packed smash burger patty.
It's like an explosive of flavor are in your mouth!
Ingredients and Substitutions
- Truffle Garlic Mayo
- Mayo - You could use any type of mayo you like. I don't recommend subbing out yogurt or another alternative for this recipe.
- Garlic Paste - You can either use the stuff from the tube or make it yourself using the back of your knife with a little bit of salt.
- Truffle Oil - If you don't like truffle, feel free to leave my fav truffle oil off. No real sub for this but totally still delicious if you don't use it.
- Smash burger
- Grass Fed Beef - You could also use turkey although it won't be as decadent.
- Kosher Salt - Pretty much any sort of salt works but I always go for this one for cooking.
- Fresh Cracked Pepper - Regular black pepper also works fine.
- Avocado Oil - You can use any neutral oil you'd like
- Grilled cheese
- Salty Butter - You can use regular butter just add a pinch of salt on top.
- Potato Bread - Sourdough, white or butter bread would also be delicious. Totally feel free to switch up your bread choice to what fits your taste.
- Roth Gouda - I love this gouda because it's got so much flavor but you could use another melting cheese if you prefer.
- Caramelized Onions - No real sub for caramelized onions but you could switch them out for marinated roasted red peppers if you'd like.
How to make it
Although there are a few components to making this truffle burger grilled cheese, the process is pretty simple.
First, we'll start with the onions. While that's cooking, we'll make the truffle mayo and the burger patty.
Then it'll be time to assemble and grill the cheese.
Caramelized onions
First, we're going to add butter and olive oil to a medium sized pan over medium heat.
Once melted, add onions and 2 pinches of kosher salt.
Cook for 30 minutes, stirring often, until onions are soft, tender, sweet and golden.
***And If you find they are starting to stick or burn to the pan, add 2 tablespoon of water as needed to deglaze.
Truffle garlic mayo
While the onions are cooking, mix together mayo, garlic paste, truffle oil and salt and set aside.
I like to serve the extra truffle mayo for dipping.
But you can also store the leftovers in an airtight container
Smash burger
Now it's time to focus on the burger patty.
Begin by rolling beef into a ball and season all sides with salt and pepper.
Heat a medium sized cast iron skillet over high heat and once it starts to smoke, carefully add oil and the burger ball right on top.
Let the burger sear on one side until dark golden brown. Then carefully flip the ball over and use the back side of a spatula to smash it as flat as possible.
Let cook for 2 more minutes or until the downward facing side is dark golden brown. Flip once more to brown the remainder of the other side. Remove from heat and set aside.
Grilled cheese
Once all the components are prepared, it's time to build the sandwich!
Smear both slices of bread equally with the truffle garlic mayo.
Place half of the shredded Roth gouda on top of one of the slices.
Then add the burger patty, caramelized onions, and the rest of the cheese on top.
Place the other piece of bread (mayo side down) on top.
Add half the butter to a fry pan over medium heat.
Once melted, add the sandwich on top and more around to absorb the melted butter.
Smear the remaining butter on the top part of the sandwich.
Cook the sandwich for a few minutes on each side.
Once the bread is crispy and golden brown and the cheese has completely melted, flip it and repeat..
Remove from heat and place on a cutting board.
Slice in half before serving with the remaining garlic truffle mayo.

- 1 tablespoon Salted butter
- 1 tablespoon Olive oil
- 2 pinches Kosher salt

- 1 pinch Kosher salt

- ⅓ lb Grass Fed Ground Beef
- ¼ teaspoon Kosher salt
- ¼ tsp Cracked pepper
- 1 tbsp Avocado oil
Grilled cheese
- 2 pats Salty butter
- 2 slices Potato bread
- 2 tablespoon Garlic truffle mayo leave the rest for dipping
- 4 oz Gouda Cheese grated (a little over half a wedge)
- 1 cooked Burger patty
- 2 tablespoon Caramelized onions
