Ingredients and Substitutions
- Ground Chicken - You could also use ground turkey or even ground salmon!
- Panko - You could also use pork rind based panko if you're not doing carbs.
- Egg - No real sub on egg for this recipe.
- Buttermilk Blue Cheese - Any sort of blue cheese will work just fine but this is my favorite because it's more mild.
- Red Onions - Feel free to use any onion - they all work!
- Celery - If you don't like celery, you could leave it out and add a pinch of celery salt.
- Buffalo Sauce - I use Frank's Buffalo Sauce but you could make your own or use another brand.
- Dried Dill - Fresh dill will also work.
- Onion Powder - No real sub for onion powder.
- Garlic Powder - Garlic salt would work just don't use any additional salt.
- Olive Oil - Any neutral oil will work just fine! Butter might burn so be cautious with that!
- Fresh Mozzarella - You could easily use low moisture mozzarella, pepperjack, white cheddar, or another good melting cheese!
- Ranch - Blue cheese dressing also works just fine! Or try my fav cottage cheese ranch dip!
- Blue Cheese - No real sub on blue cheese but you could use feta if you had to!
- Scallions - Scallions are optional. You could leave them out or use chopped cilantro or chives.
How to make it

First, you'll just want to preheat oven to 400F degrees.
Now grab a big bowl and combine all meatball ingredients in a large bowl and mix with your hands until ingredients are thoroughly mixed.
Once it's mixed up, grab a golfball sized meatball amount and roll them into shape.
Place each meatball in a cast iron skillet or a parchment lined baking sheet.
Now bake the meatballs for 25-30 minutes or until cooked through.
Remove them from the oven and add Buffalo sauce and fresh mozzarella directly on top.
Turn on the broiler and stick the skillet back in the oven for 3 minutes.
Pull out the skillet once more and top with ranch, more blue cheese, scallions and flaky salt.

Ingredients
FOR THE MEATBALL
- 1 pound Ground Chicken
- ½ cup Panko
- 1 large Egg
- ¼ cup Buttermilk Blue Cheese (I use Roth!)
- ¼ cup Red Onions finely diced
- ¼ cup Celery finely diced
- 2 tablespoon Buffalo Sauce
- ¼ teaspoon Dried Dill
- ¼ teaspoon Onion Powder
- ½ teaspoon Garlic Powder
- ½ teaspoon Salt
- 1 tablespoon Olive Oil
FOR THE SKILLET
- 1-2 cups Frank's Buffalo Sauce enough to fully cover meatballs
- ½ cup Fresh Mozzarella torn
- 3 tablespoon Ranch Dressing
- 3 tablespoon Blue Cheese crumbled
- 3 tablespoon Scallions thinly sliced
- flaky salt
Instructions
