There's just something so ridiculously delightful about cheesy mashed potatoes stuffed inside a pasta dumpling.
To me, they're the ultimate comfort food.
When I was in college, my roommate and I would eat pierogies probably twice a week.
We'd pan fry them and serve them with caramelized onions, sour cream and apple sauce.
I loved how the the sweet, salty, and rich flavors played off of each other.
So when i was developing this recipe for a sponsored instagram post for Roth Cheese, I wanted to make a more sophisticated but just as easy variation.
That's how this tasty one-pot dinner was born!
Frozen cheesy potato pierogies are baked with caramelized onions, caramelized apples, and fresh spinach.
Why the addition of spinach you may be asking?
Well, I've got a baby growing inside me so I need all the greens I can get!
But also, to be truthful, I just love it because it adds a pop of color (and nutrition!) to this rather beige dish.
On top, havarti cheese is baked until bubbly which creates the perfect cheesy crust.
It also mimics the pan-fry texture that I adore, so it's a win-win!
But you know what is the most win-win thing about this dish?!
It is made in one single pot and it takes under 45 minutes which makes dinner a breeze!
And I'll take all the free time I can get before this baby of mine pops out!

How to Cook Frozen Pierogies - One Pot Dinner
Frozen Pierogies are the ultimate wonder food! There is just so much you can do with them.
Whether you want to boil them, pan-fry them, air-fry them or bake them, they always end up tasty and delicious!
In this recipe, I'll be cooking frozen pierogies in this one-pan baking method.
Not only is it super easy to do, but they taste absolutely delicious!
To begin, you'll want to preheat your oven to 400F degrees.
Next, sauté some onions with olive oil and salt in an oven-proof skillet.
Once they soften, add sliced apples and cook for a few more minutes. This gives it that perfect pop of sweetness that's irresistible!
Now it's time to cook the frozen pierogies. To do so, simply stir in one box of frozen pierogies.
It really doesn't matter which flavor you choose as long as it's cheesy and potato-y!
Once the pierogies are tossed with the apples and onions, place the pan in the oven and bake for 15 minutes.
Remove the pan from the oven and stir in a half a bag of fresh spinach and a few pinches of salt.
Top this mixture with shredded havarti cheese and place in the oven for another 15 minutes.
I love using the Original Havarti by Roth Cheese because it's super buttery and delicious. It melts like a dream, too!
But if you don't have havarti or would like to substitute it for something else, you could use mozzarella, provolone, or sharp cheddar!
After 15 minutes, the pierogies will be cooked through and toasty.
At this point, you'll just want to turn the broiler on for a quick 3 minutes to get the final crispy cheesy crust on this one-pot dinner.
After that, they're all yours! Enjoy as-is or with a dollop of sour cream!

- Preheat oven to 400.
- In a large ovenproof skillet, add onions, olive oil, and a hefty pinch of salt and cook for 5 minutes over medium heat.
- Add apples and cook for 3 minutes until they begin to soften.
- Stir in frozen pierogies and place in the oven for 15 minutes.
- Remove the pan from the oven and stir in spinach and another pinch of salt. Top with cheese and bake for another 15 minutes.
- Without removing the pan, turn your oven to broil and leave it in there for 3 minutes or until the top is golden and toasted.
- Remove from oven and enjoy!

I've been trying to find recipes for dinners that are more out of our comfort zone and when I told my partner I was going to make this he was a little weirded out at first haha! but we both LOVED it. The sweet and savory flavors together combined with the creamy cheese potato pierogis blew us away. It's going to be a go to recipe for us here on out!
