Pierogi Lasagna

One-Pan Pierogi Lasagna with Caramelized Apples, Onions, Havarti Cheese and Spinach.

This Pierogi Lasagna is layered with spinach, havarti cheese, caramelized onions and apples. It’s a one-pot dinner that can be made in under 45 minutes and is packed full of flavor! Want some meat? Try adding bacon or sliced kielbasa sausage.

Ingredients

  • 1 large sweet onion sliced thin
  • 1 tablespoon olive oil
  • 2 small fuji apples cored and sliced thin
  • 1 lb box frozen pierogis (or about 12 pierogis)
  • ½ 5 oz bag fresh spinach about 3.5 cups
  • 1 6 oz block Havarti Cheese shredded
  • salt

Instructions

  • Preheat oven to 400.
  • In a large ovenproof skillet, add onions, olive oil, and a hefty pinch of salt and cook for 5 minutes over medium heat.
  • Add apples and cook for 3 minutes until they begin to soften.
  • Stir in frozen pierogies and place in the oven for 15 minutes.
  • Remove the pan from the oven and stir in spinach and another pinch of salt. Top with cheese and bake for another 15 minutes.
  • Without removing the pan, turn your oven to broil and leave it in there for 3 minutes or until the top is golden and toasted.
  • Remove from oven and enjoy!
