What is a Teriyaki Salmon Sushi Bake?

Unlike the original version, this recipe is perfectly portioned for two people.
And as with before, this is the opposite of a traditional authentic sushi recipe - but rather a fun spin on one of my favorite rolls.
Just image this: Succulent teriyaki glazed salmon bites are broiled to perfection. The top of the fish is coated in a sticky, caramelized teriyaki sauce that's both sweet and savory.
After a few minutes under the broiler, all of your favoite sushi flavors are added on top.
I'm talking spicy mayo, avocado, furikake for the nori flavor, scallion and of course - we gotta have our crispies! So instead of panko, which is the usual suspect, we're going to use fried onion bits for even more flavor.
As you can imagine, each bite is a delightful blend of textures and tastes.
From the sweet and savory glazed salmon to the sticky rice, to the spicy mayo and creamy avocado -- it's basically impossible to not lick the whole baking dish clean.
So go ahead and host date night at home because this recipe is about to be your new favorite thing to cook!
Ingredients & Substitutions
- Salmon: This recipe was developed for Salmon so if you switch the protein, you will need to adjust cooking times accordingly. Some other protein that might work are sprimp, crab, tofu, tuna, snapper or grouper.
- Teriyaki Sauce: I always use Bachan's Japanese BBQ Sauce which is essentially a delicious high quality teriyaki sauce. You could either make your own with this delicious recipe or buy some from the store.
- Brown Sugar: This is just to help create a sticky caramelized glaze on the salmon. You could leave it off if you don't want any added sugar.
- Kosher Salt: If you're using anything other than kosher salt, you will need to just a pinch less as other salts taste more "salty".
- Garlic Powder: Garlic powder just adds a little something extra but you could leave it off if you don't have any.
- Cooked Sushi Rice: I always go for Innovasian's frozen sticky white rice because it's ready in 5 mintues... but this recipe is also perfect for leftover sushi rice. You'll just want to microwave it for a few minutes to get the chill off. It would also be delicious with my rice cooker coconut rice.
- Avocado: If you're not a fan of avocado, you could leave it off or swap it for cucumber.
- Spicy Mayo: I always have a container of my go-to spicy mayo in the fridge! If you don't, you can make it yourself in under 5 minutes or buy some at the grocery store or on amazon.
- Furikake: If you don't have furikake, you could swap it it out for toasted sesame seeds.
- Crispy Fried Onion Bits: I always buy a jar of the crispy fried onion bits from the Asian market but you could absolutely use the kind from Ikea or even the Thanksgiving casserole fried onion topping.
- Scallions: These are optional but you could swap out for chives if you wanted to.
How to make it
Prep Salmon: Carefully remove skin from salmon then cut into 1” pieces. In a medium sized bowl, combine cubed salmon, teriyaki sauce and salt. Stir and set aside.
Build the Bake: In a small baking dish add cooked sticky rice and pat it down to create a flat surface. Top with teriyaki salmon and evenly sprinkle with garlic powder.
Broil it: Turn your broiler on and place in the oven near the top rack for 6 minutes until it begins to caramelize.
Add Toppings & Serve: Remove the baking dish from the oven and add avocado, a drizzle of spicy mayo, furikake, crispy fried shallots, and scallions.

- ¾ lb Salmon I used Coho Salmon 🍣
- 3 tablespoon Teriyaki Sauce or Japanese BBQ Sauce
- 1 tablespoon Brown Sugar
- ¼ teaspoon Kosher Salt
- ¼ teaspoon Garlic Powder
- 3 cups Cooked Sushi Rice
- 1 small Avocado cubed
- 3 tablespoon Spicy Mayo or my yum yum sauce recipe!
- 1 tablespoon Furikake
- 2 tablespoon Crispy Fried Onion Bits
- 2 tablespoon Scallions finely diced
Instructions
