These Salmon Sushi Cups are such a quick and easy dinner recipe. I love tossing the salmon in sweet chili sauce because it creates a sweet and sticky caramelized glaze that is so tasty! I top them with spicy mayo (or my fav yum yum sauce!) and avocado!

It is a delicious and easy-to-make dish that is perfect for a quick weeknight meal or a weekend party.
To make it, fresh salmon is tossed in a sweet and spicy marinade, then baked in individual cups (using a muffin tin!) made from nori seaweed that are stuffed with sushi rice.
Once they're baked, the cups are then topped with avocado, toasted sesame seeds, crispy fried onion and a drizzle with my homemade yum yum sauce.
The result is a flavorful and visually appealing dish that is sure to please everyone at the table.
Ingredients and Substitutions
- Salmon - If you don't like salmon, you could use another fish such as mahi, grouper, snapper or hogfish.
- Sweet Chili Sauce - Since this is the one ingredient sauce, I don't recommend switching it up. But if you don't like sweet chili, you could def try teriyaki sauce or even coconut aminos.
- Nori - You'll need these to form the base of the sushi cups. You could also use wonton wrappers if you don't like seaweed.
- Sushi Rice - Since sushi rice sticks together, it's important to use that. You can either make it yourself or do as I do and buy the Innovasian sticky white rice in the freezer section.
- Avocado - If you don't like avocado, you could use cucumber.
- Toasted Sesame Seeds - If you don't have sesame seeds, leave them off.
- Crispy Fried Onion - These add the perfect crunch to the topping but if you don't have them, you could easily crisp up some panko in a skillet with a little bit of oil and use that.
- Yum Yum Sauce - Spicy mayo works in place of yum yum sauce.
How to make them

First, you'll start by preheating your oven to 400F degrees.
Then cut the skin off of your salmon and cube it into ½ inch pieces.
Now place cubed salmon, sweet chili sauce, and a hefty pinch of salt in a small bowl and toss until coated.
Spray a muffin tin with nonstick spray and add a piece of nori to each cup, followed by a scoop of the cooked sushi rice - making sure to distribute rice evenly across the cups.
Evenly distribute the salmon on top of the rice and bake for 10 minutes before turning on the broiler for another 2-3 minutes... or until the salmon is cooked and the sweet chili glaze has caramelized.
Now that they're cooked, remove it from the heat.
Top each of the sushi cups with yum yum sauce, avocado cubes, sesame seeds, and a sprinkle of the crispy fried onion bits.
