Ingredients and Substitutions
- Olive Oil - Since this is an Italian recipe, I do not recommend swapping the olive oil out for another oil.
- Sourdough - You could swap the sourdough for any, rustic artisan style bread you prefer.
- Zucchini - You could also use summer squash or eggplant if zucchini isn't your thing.
- Burrata - Feel free to use ricotta, goat cheese or even boursin instead of burrata.
- Balsamic Reduction - You can either make your own or use store-bought.
- Flaky Salt - Flaky salt adds so much texture and I really think it belongs on this recipe so please get yourself some if you don't have it already - it's a game changer!
- Fresh Cracked Pepper - Regular black pepper will work but it tastes best if you're using freshly grinded peppercorns.
How to make it
Making this Italian inspired Zucchini Burrata toast is a total breeze.
Toast the Bread: Heat a frying pan over medium and add 1 tablespoon of olive oil. Once it’s hot, add your toast and cook for a few minutes. While it’s cooking, drizzle the top side of the toast with another tablespoon of olive oil. Once the first side is golden brown, carefully flip the toast and cook the remaining side until it’s also golden brown. Remove from heat and set aside.
Caramelize the Zucchini: Wipe out any crumbs from the bread and add remaining olive oil to the frying pan. Add zucchini and a hefty pinch of salt and spread the zucchini out. Let the zucchini fry in the oil until they start to crisp up then stir, making sure to flip so that both sides of the zucchini pieces are caramelizing. Once the zucchini is golden on each side, turn the heat off and set aside.
Build the Toast: Evenly distribute the caramelized zucchini between the two slices of bread and drizzle with balsamic glaze. Tear the burrata ball in half then place each half on top of the zucchini toast. Add a drizzle of high quality olive oil on top along with a pinch of flaky salt and fresh cracked pepper.
