- Sharp Cheddar - Feel free to swap out the sharp cheddar for any other melty cheese you prefer. I recommend pepperjack, asiago, mozzarella or even havarti.
- Jiffy Honey Cornbread Mix - No sub in the world for a box of jiffy cornbread mix! It's so easy and it's what this recipe is all about.
- Candied Jalapenos - I love candied jalapenos and these from Space Coast Spreads are all my all time favorite!

Making Jiffy Spoonbread even better is super easy! All you need to do is add a little cheddar and some pickled jalapenos.
You'll want to begin by preheating the oven to 375F degrees.
Then you'll grab a large bowl and whisk together melted butter, dukes mayo, eggs, corn, creamer corn, half the cheddar and the cornbread mix. Let rest for 5 minutes.
Now pour it into greased baking dish and bake for 35-40 minutes or until the center is set.
Can feed 6-10 people and is best made day-of!

Ingredients
- 1 cup Mayo
- 6 tablespoon Salted Butter melted
- 2 Eggs
- 1 8 oz can Corn drained
- 1 8 oz can Creamed Corn
- 1 8 oz block Sharp Cheddar shredded and divided
- 1 box Jiffy Honey Cornbread Mix
- 2 tablespoon Candied Jalapenos
- ¼ cup Honey for drizzling
Instructions
- Preheat oven to 375F degrees.
- In a large bowl, whisk together melted butter, dukes mayo, eggs, corn, creamed corn, half the cheddar and the cornbread mix. Let rest for 5 minutes.
- Pour into greased baking dish and top with the remaining cheddar and candied jalapenos. Bake for 35-40 minutes or until the center is set.
- Once removed from the oven, drizzle the entire thing with honey and serve.
