Ingredients and Substitutions
- Salted Butter - If you don't have salted butter, unsalted also works, just be sure to add an extra pinch of salt.
- Eggs - No sub for eggs unless you are comfortable working with vegan eggs.
- Cheddar - Feel free to swap the cheddar for any sort of easy melting cheese. I recommend white cheddar, asiago, fontina or even smoked gouda.
- Kings Hawaiian Rolls - The wouldn't be hawaiian sliders without the Kings Hawaiian buns!
- American Cheese - I think American cheese is elite on a breakfast sandwich but you could absolutely swap it for cheddar or another melting cheese like muenster, swiss or fontina.
- Chives - These are optional but add color and a slight oniony taste. Swap for scallions or leave them out.
- Bacon - If you're not into bacon, you can either sub it for sausage or another breakfast meat... And if you don't eat meat, just leave it off or sub it for a vegetarian friendly protein.
- Mayo - You could sub the mayo for greek yogurt or sour cream but mayo works and tastes the best!
- Sriracha - Any sort of spicy sauce will work in the spicy mayo. Try sambal, your favorite hot sauce or even smoked paprika with some chili powder.
How to make them
Making this easy hawaiian roll breakfast recipe is super easy!
To begin, preheat your oven to 350F degrees.
Now make your spicy mayo by stirring together mayo and sriracha. If you like more kick, add more sriracha until you dig it. Set this aside.
Now prep your eggs. Crack 12 eggs into a large bowl and add some salt. Use a whisk to whisk them together until they're uniformly yellow and combined.
Now grab a large nonstick pan and melt some salty butter over medium heat.
Once the butter is melted and bubbly, add the eggs. Stirring them often, continue cooking until the eggs are 75% done.
Now add your cheese and a few dashes of hot sauce. Keep stirring the eggs until the cheese has melted and the eggs are cooked through.
Grab a baking dish and spray it with nonstick spray.
Cut the Hawaiian rolls in half and break them into individual pieces.
Add the bottom buns followed by a smear of the spicy mayo. Then add the cheesy scrambled eggs, the bacon, the chives, and the american cheese.
Place the remaining half of the buns on top and brush with melted butter.
Pop them in the oven for 18 minutes or until teh buns are toasted and crisp.
Remove from the oven and serve immediately with more spicy mayo for dunking.

For the Cheesy Scrambled Eggs
- 2 tablespoon Salted Butter
- 12 medium Eggs
- ½ teaspoon kosher salt
- 1.5 cup Cheddar
For the Breakfast Sliders
- 1 12 pack Kings Hawaiian Rolls
- 1 recipe Spicy Mayo (listed above)
- 1 recipe Cheesy Scrambled Eggs (listed above)
- 1 3.5 oz bag Precooked Bacon (or about 1 cup crumbled cooked bacon)
- 2 tablespoon Chives
- 6 slices American Cheese
- 2 tbsp Melted Salted Butter
Instructions

For the Spicy Mayo

For the Breakfast Sliders
- Spray a baking dish (the one I use is linked above) with nonstick spray. Cut the Hawaiian rolls in half and break them into individual pieces.
- Add the bottom buns followed by a heavy smear of the spicy mayo - if more is leftover, set it to the side for serving.
- Now add the the cheesy scrambled eggs, the bacon, the chives, and the american cheese.
- Place the remaining half of the buns on top and brush with melted butter.
- Place the baking dish in the oven for 15-18 minutes or until the buns are toasted and crisp and the cheese has melted. .
- Remove from the oven and serve immediately with more spicy mayo for dunking.

I don't really recommend making ahead of time because the cheesy eggs could separate and the bread will prob get pretty soggy! That being said, I haven't tried it so if you do, please let me know!
