Cottage Cheese Queso Dip is a swoon-worthy cheesy dip that's flavored with Hatch Green Chilis.
Unlike tradtional queso, this version is made with cottage cheese, chilis, hot sauce and american cheese.
It's packed full of protein while still tasting reminiscent of this classic Mexican cheese dip.

Ingredients and Substitutions
- Cottage Cheese - Cottage Cheese is the star of this dish. I typically use low fat cottage cheese because that's what I have on hand but it's delicious with any fat percentage. The only thing I should warn you is if you use nonfat, it has a tendency to seperate more.
- American Cheese - I'm using Eric Greenspan's New School American cheese but regular american cheese or a lil bit of velveeta also works.
- Green Hatch Chilis - Thes canned chilis just adds so much flavor. If you didn't have a can of hatch chilis, swap it for your favorite salsa.
- Hot sauce - Im using Melinda's Fire Roasted Garlic and Habanero Hot Sauce which packs a ton of flavor and heat but you could absolutely use another hot sauce of your choosing.
How to make it
Making cottage cheese queso is as easy as 1-2-3!
First we're just going to prep our cottage cheese so that it's nice and smooth.
To do so, blend your cottage cheese with an immersion blender or food processor until smooth and creamy.
Next it's time to add the blended cottage cheese, shredded american cheese, hatch chilis, and hot sauce to a microwave safe bowl.
Stir everything up and place in the microwave for 30 seconds at time.
Make sure to stir between each session so that the cottage cheese doesn’t seperate.
It should take about 2.5 minutes for everything to melt and warm up.
SOMETHING TO CONSIDER: The lower/no fat tubs of cottage cheese are more likely to separate when heated so be sure to microwave at 30 second increments and stir completely between each round. I found that it’s more likely to separate if you microwave for longer than 3 minutes.

- 1 teaspoon Melinda’s Fire Roasted Habanero Hot Sauce (or your fav flavorful Hot Sauce)
