For the Cottage Cheese Walking Taco
- Olive oil - Any neutral oil will work.
- Ground Turkey - I choose turkey but you could absolutley use beef or chicken.

- Cheddar - Feel free to use any of your favorite meltable cheese such as pepperjack, mozzarella, colby, etc.
- Cottage Cheese - This is kind of the main ingredient as it provides so much protein and creaminess but you could also swap it for cream cheese or blend the cottage cheese if you don't like the texture.
- Salsa - I'm using a jar of store bought salsa for conveniece but feel free to use homemade or whatever kind of salsa you prefer - this is totally adaptable to your tastebuds.
For the Lettuce Wraps - these are optional
- Romaine Lettuce- These are the sturdiest for lettuce wraps but you could use bib lettuce or iceberg if you choose.
- Hot sauce - Totally up to you to use your favorite hot sauce. I love the green sauce from Melinda's.
- Pink Pickled Onions - My recipe for pink pickled onions are my fav thing to add but you could do fresh onion if that's what you prefer.

How to make it
Making this savory cottage cheese recipe is a total breeze.
You'll want too begin by adding olive oil to a fry pan over medium-high heat. I'm using my Our Place 2.0 fry pan and I love it!
Now it's time to add the ground turkey and break it up until it’s crumbled.
Cook until it's all the way cooked through then add taco seasoning and water as directed on the package.
Now it's time to turn the heat down and add your cheddar, cottage cheese and salsa.
Stir this mixture together until combined. Be sure to season with salt and pepper if needed.
Once the cottage cheese taco meat is ready, it's time to build the wraps.
But also, full disclosure, it's also delicious if you want to just scoop it up and eat it with chips as-is!
If you're doing the lettuce wrap route, all you'll need to do is add a few scoops of the cottage cheese walking taco mixture to each lettuce leaf.
Then it's time to top with your favorite hot sauce, some pink pickled onions, pickled jalapenos and crushed Fritos.
Then it's time to serve!

Honey, when you're crafting the ultimate lettuce wrap, buttery Bibb or crisp Romaine is where it's at – they're the fabulous divas of the veggie world that'll hold your fillings like a cozy, crunchy blanket.
