This Easy Steakhouse Burger Bowl Recipe with Potatoes has all the flavors of a loaded steakhouse burger without the bun. We're talking juicy ground beef, bacon, tomatoes, pickled red onions, crispy onions, chives and plenty of creamy blue cheese dressing all over crispy roasted potatoes.

Why You'll Love It
I've made a LOT of burgers over the years (I even won an Food Network All Stars Burger Competition!), and one thing remains true: sometimes the best part isn't the bun. It's all those salty, cheesy, tangy favorite burger toppings piled together. And that's exactly why these loaded burger bowls work so well.
Instead of traditional burgers, we're roasting Yukon Gold potatoes with steak seasoning, garlic powder and paprika until they're crispy and golden brown. Think crispy fries meets roasted potatoes, but way easier because there's no frying involved.
Then comes the hamburger meat. I brown ground beef in a large skillet before adding Worcestershire sauce and Dijon mustard. It's a simple combination, but it gives the beef that savory, slightly tangy flavor you expect from a really good classic burger.
And then we load 'em up. Cherry tomatoes, smoky bacon, tangy pickled red onion, crispy onions and fresh chives go on top. Instead of making a special sauce or traditional burger sauce, I'm using creamy blue cheese dressing. It instantly gives the whole bowl that steakhouse vibe without making another sauce from scratch.
I've developed countless burger and sandwich recipes over the years, and my favorite way to make a burger-inspired bowl feel satisfying is to include something crispy, something fresh and something acidic. Here, you've got all three! It's a great idea for an easy weeknight dinner, game day or meal prep. And honestly? It's quickly become one of my favorite meals when I'm craving a bacon cheeseburger but want something not as heavy.

Ingredients & Substitutions
- Yukon Gold Baby Potatoes: These get beautifully crispy on the outside while staying creamy inside. Russet or red potatoes work, too. You could also swap them for crispy fries if that's what you've got.
- Olive Oil: Helps the potatoes get crispy and golden brown. Avocado oil works, too.
- Kosher Salt: Seasons the potatoes from the beginning. You can adjust depending on how salty your steak seasoning is.
- Garlic Powder: Adds savory flavor to the potatoes. If your steak seasoning already contains a lot of garlic powder, you can use a little bit less.
- Steak Seasoning: This is our shortcut for adding tons of steakhouse flavor to both the potatoes and ground beef. Use your favorite blend. If yours is salt-free, season accordingly.
- Paprika: Adds color and a mild smoky-sweet flavor. Smoked paprika is also delicious here.
- Ground Beef: I like ground beef with enough fat to stay juicy and flavorful. You can use leaner hamburger meat if you prefer; just be careful not to overcook it. Ground turkey or chicken also works.
- Onion: This is optional but it adds bulk and flavor to the beef. Any color onion will work well.
- Worcestershire Sauce: This is one of my favorite ways to make ground beef taste extra savory without adding a million ingredients. It brings that classic hamburger flavor to our deconstructed burger.
- Dijon Mustard: Adds acidity and tang to the beef. Yellow mustard can be substituted for more of a classic burger flavor.
- Blue Cheese Dressing: This is our creamy steakhouse-inspired finish. You could absolutely make a burger sauce instead. Try mixing mayo or Greek yogurt with ketchup, mustard and a splash of pickle juice. If you're watching added sugar, just check the labels on your dressing and condiments.
- Cherry Tomatoes: These add freshness and sweetness. Grape tomatoes work perfectly, too.
- Cooked Bacon: Because bacon cheeseburger bowls are obviously better with actual bacon. Turkey bacon works if that's your thing.
- Pickled Red Onions: The acidity cuts through the richness of the ground beef, bacon and blue cheese dressing. Raw red onion or thinly sliced shallots also work.
- Crispy Onion Bits: These add another crunchy layer that makes the whole thing more fun. Fried shallots would also be delicious.
- Fresh Chives: Chives bring a fresh oniony finish without overpowering everything.
- Flaky Salt & Freshly Cracked Pepper: Add these right before serving to make all the flavors pop.

Want Even More Burger Toppings?
One of the best things about a burger bowl recipe is that you can basically treat it like a choose-your-own-adventure situation.
Add chopped dill pickles, avocado, shredded cheddar, jalapeños or even a handful of romaine lettuce. If you love a classic burger with lettuce, tomato, onion and pickles, throw them all in.
You can also make a quick special sauce in a small bowl using mayo or Greek yogurt, ketchup, mustard and a splash of pickle juice.
There's really no wrong answer here.

How to Make It
- PREHEAT: Preheat your oven to 425°F.
- PREP THE POTATOES: Cut the baby potatoes into evenly sized pieces. Toss them with olive oil, kosher salt, garlic powder, 2 teaspoons steak seasoning and paprika.
- ROAST: Spread the potatoes out on a large baking sheet, leaving some space between them. If you're doubling the recipe, use two baking sheets rather than overcrowding one. Roast for 35-45 minutes, flipping halfway through, until deeply golden brown and crispy.
- AIR FRYER OPTION: You can also cook the potatoes in the air fryer at 400°F until crispy and tender, shaking the basket a few times as they cook. Depending on your air fryer and the size of the potatoes, start checking around 18-20 minutes.
- COOK THE BEEF: Heat a large skillet over medium high heat. Add the ground beef and remaining steak seasoning. Cook, breaking the meat into bite-sized crumbles, until browned and cooked through.
- DRAIN: If necessary, carefully drain any excess grease from the skillet
- SEASON: Add onion and cook for a few minutes until softened then stir the Worcestershire sauce and Dijon mustard into the ground beef. Cook for another minute so the hamburger meat absorbs all that savory goodness. If you want even more burger flavor, a pinch of onion powder is great here, too.
- BUILD: Divide the crispy potatoes among serving bowls. Add your toppings to the seasoned ground beef. Use the cherry tomatoes, cooked bacon, pickled red onions, crispy onions and fresh chives.
- FINISH: Drizzle generously with blue cheese dressing and finish with flaky salt and freshly cracked pepper.
- SERVE: Serve immediately while the potatoes are still crispy and the beef is hot. Add dill pickles, romaine lettuce or any of your other favorite burger toppings if desired.
- SAVE: For meal prep, let everything cool before refrigerating. Store the beef and potatoes separately from fresh toppings and dressing. Keep the dressing in a separate container so nothing gets soggy. Reheat the potatoes in the oven or air fryer, warm the beef, then assemble your bowl fresh.

Are Burger Bowls Healthy?
You'll often see recipes like this called healthy burger bowls, but "healthy" means something different to everyone.
What I like about this recipe is that it's incredibly easy to customize. You can add plenty of romaine lettuce and vegetables, use lean ground beef, swap the dressing for a Greek yogurt-based burger sauce or adjust the amount of potatoes and bacon to fit what works for you.
Unlike traditional burgers, there's also no bun, but that doesn't automatically make this recipe better or worse nutritionally. It's simply another delicious way to enjoy all those classic burger flavors.
For me, the perfect meal is one that's satisfying, tastes amazing and works for the people I'm feeding. This one checks all three boxes.

What to Pair It With
These loaded burger bowls already have the ground beef and crispy potatoes covered, so I'd round out dinner with something fresh or veggie-forward.My Shortcut 1905 Salad would be SO good here. It's crisp, tangy and refreshing, which helps balance the richness of the beef, bacon and blue cheese dressing.
You could also make my Hot Honey Butter Skillet Corn. It's a super easy side dish, and that little sweet-and-spicy situation works perfectly with all the savory steakhouse flavors. For summertime, I'd go with my Meme's Southern Fried Corn. Fresh corn, bacon drippings and butter make it feel right at home next to a burger-inspired dinner.
Or keep things cool and crunchy with my Easy Italian Grinder Salad. It's loaded with crisp veggies and tangy Italian flavors, so it's a nice contrast to these rich, cheesy burger bowls.
