If you’ve never had dill pickle pizza, allow me to lovingly question your life choices: WHAT ARE YOU WAITING FOR?! This crispy puff pastry version is layered with a creamy white sauce made from ranch dressing, garlic, and cheese, and then loaded up with tangy dill pickle slices and a golden crust that’s basically perfection.

Why You’ll Love It
This creamy garlic dill pickle pizza is what happens when your obsession with ranch dressing and dill pickles finally collides in the most delicious way possible.
Whether you’re a lifelong dill pickle lover or just dill-curious, this recipe is for you! It hits all the salty, cheesy, tangy notes your snack-loving heart craves.
The base is a shortcut-friendly puff pastry instead of traditional fresh dough, which means you still get those buttery, flaky layers without needing to roll out your own pizza dough or grab something from the store.
Plus, using puff pastry gives the whole thing a lighter, crispier bite compared to a thicker crust pizza—which makes it perfect for parties, apps, or lazy weeknight dinners. Oh, and I always have one in my freezer... unlike a ball of pizza dough!
Now let’s talk toppings. The creamy base combines ranch, grated garlic, and a shredded italian cheese blend, acting like a dreamy garlic sauce that melts right into the flaky crust.
It’s topped with more cheese, plenty of high-quality dill pickle slices. And of course a generous sprinkle of dill pickle seasoning. Then boom! Just like that, you’ve got a white pizza that pickle people dream about!
And if you're extra and wanna jazz it up even more? Try adding some of these additional toppings like crispy bacon, pepperoni cups, thinly sliced red onions, or even a few dabs pickle seasoning whipped ricotta when it comes out of the oven.
So whether you're making it for National Pickle Day, a backyard get-together, or just because you need a new excuse to put pickles on everything, this puff pastry pizza is guaranteed to be your next go-to snack attack!

Ingredients & Substitutions
Here’s everything you need to bring this tangy, cheesy dill pickle pizza to life. These ingredients are simple, flavorful, and easy to swap if you want to customize your own pickle masterpiece. Don't forget recipe cards have the exact ingredients.
- Puff Pastry Sheets: Store-bought puff pastry works perfectly here. Just make sure it’s fully thawed and at room temp before rolling it out. You could absolutely swap out the puff pastry for a ball of store-bought dough.
- Ranch Dressing: Acts as the creamy base for this white sauce. You could also use sour cream with a packet of ranch seasoning or a ranch-sour cream blend for extra tang. You could also swap it for one of your favorite white pizza sauces
- Creamy Italian Blend Cheese: I recommend using Land O Lakes italian blend. It adds that rich, melty mozzarella cheese vibe with a little extra flavor from parmesan and provolone. Substitute with cream cheese, white cheddar cheese, or parmesan cheese if you want to!
- Colby Jack Cheese: Aka co-jack cheese if you're using Land O Lakes! It's melty, mild, and perfect for pizza. Cheddar cheese or mozzarella cheese are good backups.
- Dill Pickle Slices: Go for high-quality or whole dill pickles sliced thin for your pizza toppings. I recommend Grillo's dill pickle chips if you want extra crunch because they are THE BEST!! You could also use sweet pickles if that's your thing... and although i love them, I prefer regular ole' dill pickles on this pizza.
- Garlic Cloves: Freshly grated garlic gives the creamy base major garlic sauce energy. Garlic powder also works!
- Dill Pickle Seasoning: I get this from Trader Joe's and it's the perfect seasoning to snag if you're one of us dill pickle lovers. I think other grocery stores also sell something like this but if you don't have it, sub with a combo of dried dill and garlic salt or even onion powder if you don’t have a premade blend.
- Olive Oil: Brushed on the crust for that golden brown finish.
- Flour for Dusting: Helps prevent sticking when rolling out the puff pastry.
- Optional Add-Ons: Try red onions, crispy bacon, green peppers, or a sprinkle of fresh dill on top of the pizza once it’s baked.
How to Make It
Follow these step-by-step instructions to build your puff pastry pizza from the flaky crust up. Each layer adds bold, creamy, and savory flavor that pickle lovers will go crazy for.
- PREP WORK: Start by preheating your oven to 400°F and grabbing a sheet pan lined with parchment paper to keep the puff pastry from sticking.
- ROLL OUT THE BASE: Lightly dust a clean surface with flour. Lay out the puff pastry and seal the two sheets together by pressing the edges. Roll it slightly to widen the sheet, then transfer it to your large prepared baking pan.
- MAKE THE CREAMY BASE: In a small bowl, mix together the ranch dressing, grated garlic, and shredded Creamy Italian Blend Cheese to create your dreamy white pizza sauce.
- DRY THE PICKLES: Now place your sliced dill pickles on a paper towel to remove the extra dill pickle juice. If you don't do this, you pizza might et a little soggy. And if your dill pickles have a little dill weed on them, no worries!! It's delicious.
- ASSEMBLE THE PIZZA: Spread the creamy base across the puff pastry, leaving about a 1-inch border around the edges. Top with shredded Co-Jack cheese, then arrange your dill pickle slices evenly across the top of the pizza.
- SEASON & OIL: Brush the outer crust with olive oil and sprinkle it with dill pickle seasoning (or that dried dill + garlic salt combo).
- BAKE IT UP: Bake for 20–25 minutes until the crust is puffed and golden and the cheese is melted and bubbly.
- SERVE: Let it cool slightly before slicing into pizza slices. Add extra ranch or fresh dill if you're feelin’ fancy.
- SAVE: Store any leftover slices in an airtight container in the fridge for up to 3 days. To reheat, pop them in a toaster oven or air fryer or back on a baking sheet at 350°F until warmed through.
