Trader Joe's Cuoricini Ravioli is a whimsical, heart-shaped bright pink hug in pasta form.
Each ravioli pocket is stuffed with ricotta, parmigiano, and balsamic reduction.
This cheesy combination results in a light, earthy, slightly sweet, and tangy blend of flavors that begs for a bold sauce.
To make it all come together, we're making a simple sauce of blended goat cheese and pickled beets.
Once that's pureed, it gets added to lightly cooked garlic, olive oil, salty butter and red pepper flakes to really make it shine.
On top, fresh parmigiano and basil are sprinkled to add freshness and nuttiness.
Overall, this pasta dish not only looks amazing and so fitting for Valentine's Day, but it tastes amazing, too!
Ingredients and Substitutions
- Pickled Beets - We're using a jar of pickled beets and their juices. If you are using fresh beets, that's totally fine. Just be sure to cook them until tender, then add about ¼ cup broth along with a splash of vinegar.
- Goat Cheese - If you don't like goat cheese, you can sub for another similar cheese like boursin, feta, or even cream cheese.
- Olive Oil - Any neutral oil will work just fine.
- Garlic Cloves - Fresh garlic is best. I do not recommend subbing it for the pre-minced jarred variety in the grocery store.
- Red Pepper Flakes - The red pepper flakes don't really bring much heat to the dish but instead, make it have more depth. If you're not a fan of red pepper flakes, you can simply leave them out.
- Trader Joe’s Ricotta Cuoricini Ravioli - If you can't find these ravioli, you can pair them with another cheese-based ravioli of your choice. Basically anything that would be good with goat cheese and beets works wonderfully!
- Salted Butter - If you're using unsalted butter, just add an extra pinch of salt to make up for it.
- Parmigiano - If you don't have parmigiano, you can crumble more goat cheese on top.
- Basil - Fresh basil is best for finishing but you could def add fresh oregano or even fresh mint on top if you want.

Prep the Ingredients: You'll want to start by getting a large pot of water boiling for the ravioli. Meanwhile, add goat cheese, beets and their juice to a small blender and puree until smooth and creamy then set aside.
Make the Sauce: Heat a large pan over medium and add olive oil, garlic and red pepper flakes;, cook down for 2-3 minutes or until garlic starts to soften. Add beet goat cheese puree to then pan and cook, stirring often, for a few minutes so that it reduces slightly.
Cook the Ravioli: While it’s cooking, add your ravioli to the boiling water and cook for a few minutes or until they begin to float.
Finish it up: Once they’re finished, add them to the beet goat cheese sauce along with butter and parmigiano. Toss gently until everything is coated, taste and season with salt and pepper if needed before finishing with a sprinkle of fresh basil.

- 1 pinch Red Pepper Flakes

- 2 tablespoon Salted Butter
- ½ cup Parmigiano grated
- 3 tablespoon Fresh Basil julienned
