This creamy roasted feta soup recipe is made with butternut squash, sage and honey. It's probably the easiest soup recipe I've ever made while also using a ton of pantry staples. Try it with my Crispy Feta Toast!
What is Roasted Feta Soup?
Roasted Feta Soup is the new it girl of the soup world!
Just imagine a hug in a bowl, the kind that wraps you up in a warm embrace on a chilly evening—that's what this roasted feta soup is all about.
Cubes of sweet butternut squash roasting to perfection, nestled next to a block of feta cheese that's getting all soft and creamy.
Into the pot they go, where they're joined by the earthy notes of sage and a drizzle of honey that's like sunshine in liquid form.
With a few simple whirls in your blender, it transforms into a velvety concoction that's so ludicrously easy to make, you'd think there's some sort of kitchen sorcery involved.
But nope, it's just you, armed with your trusty pantry staples, conjuring up the creamiest, dreamiest roasted feta soup you can imagine.
And when you dip your feta toast into it, you realize this isn't just soup; it's comfort itself, with a little zing, a touch of sweetness, and a whole lot of soul-warming goodness.
Ingredients and Substitutions
- Butternut Squash - You can swap out butternut squash for a variety of different vegetables - try it with sweet potatoes, baking potatoes, beets, carrots, onions, tomatoes, etc!
- Garlic - Fresh garlic is best but you can try using the jarred variety if that's all you have.
- Olive Oil - Any neutral oil will work just fine.
- Sage Leaves - If you don't have fresh sage leaves, try using thyme, rosemary or even herbs de provence.
- Feta - I'm using a block of Athenos Feta and I highly recommend it. It gets super creamy and makes the soup so dang good!
- Vegetable Broth - You can absolutely swap vegetable broth for chicken stock.
- Honey - If you don't have regular honey, you could use brown sugar or even hot honey.
How to make it
Making Roasted Feta Soup is a total breeze - just listen to how easy it is!
First, you'll want to begin by pre-heating your oven to 400F degrees.
In a braising pan or oven safe cookware like a Dutch oven, add extra virgin olive oil, butternut squash, salt. If your'e using dried herbs, add them now. If using fresh herbs, reserve for later, and toss to coat.
Place feta chunk in the middle of the pot, and nestle the bulb of garlic (cut side down) where you see fit. Bake, covered, for 45 minutes to 1 hour.
Remove the pot from the oven and take out the roasted garlic bulb.
Carefully squeeze the roasted garlic out into pot and add the honey, veggie broth and the fresh herbs if you’re using them.
Blend the ingredients by either adding them to a blender, a food processor or using a handheld immersion blender to purée until smooth and creamy.
Taste and season with more salt if desired.
And of course, serve it with crispy feta toast for dunking!

- If sage isn’t your thing, try one teaspoon of dried herbs. Some of our favorites are thyme, rosemary, basil, and smoked paprika.
- Want to make it more kid friendly? Toss it with cooked macaroni noodles for a secret veggie packed Mac and cheese.
- Need more protein? Try pairing it with my Mediterranean feta chicken meatballs, chopped fried chicken cutlets. For seafood, try pan fried shrimp, a piece of salmon. If you're vegetarian, try crispy chickpeas or tofu.
- We love serving this recipe with crispy feta toast but it’s also delicious with a traditional grilled cheese: you can even cut the grilled cheese up into tiny croutons.
- Want to add toppings to make it even more exciting? Try adding a drizzle of heavy cream, some spicy chili oil, some candied nuts. Or try some pickled jalapeños, some crispy bacon bits or even store bought fried onions that you might have on hand for green bean casserole..

You could also pair it with this delicious brie grilled cheese with fig jam, this avocado grilled cheese or even this turkey pesto sandwich.
