Ingredients and Substitutions
- Salted Butter - If you're using unsalted butter, just add a hefty pinch of salt to make up for it.
- Olive oil - I highly recommend olive oil for this dish as it adds flavor and richess. If you don't have olive oil, I would sub for avocado oil.
- Garlic - Fresh garlic is best but you could also sub it for shallots and/or onions.
- Parsley - If you don't have parsley or are not a fan, feel free to leave it out.
- Red Pepper Flakes - These are also optional but they add just a little bit of depth (rather than spice) to the dish.
- Trader Joe’s Cauliflower Ravioli - You can use any ravioli you like.
- Parmigiano - Any hard aged italian cheese will work - try Romano, Grana Padano, Asiago, etc!
How to make it
Making this upgrade to Trader Joe's Cauliflower Ravioli is so easy!
First, bring a pot of water to a boil with salt.
Meanwhile, add butter and olive oil to a large sauce pan over medium heat.
Once it’s melted, add garlic and cook for 2-3 minutes or until it’s tender and fragrant.
While the garlic is softening up, add the ravioli to the salted boiling water.
While the ravioli is cooking, add the parsley and red pepper flakes to the garlic butter and oil.
After about 2-3 minutes the ravioli should be floating and tender, strain them and reserve ½ cup pasta water.
Add the ravioli to the sauce pan and toss. Add ¼ cup of the reserved pasta water if it seems a little dry. If it's still dry, you can add the rest -- if not, disgard it.
Finish with salt and pepepr to taste followed by a sprinkling of freshly grated parmigiano.
