What is Trader Joe’s Ricotta and Lemon Zest Ravioli with Burst Tomatoes and Burrata
Buckle up because Trader Joe’s Ricotta and Lemon Zest Ravioli is here to take you on a flavor roller coaster!
Imagine silky pillows of pasta stuffed with the dreamiest blend of creamy ricotta and zesty lemon, just waiting to burst in your mouth.
But hold on - it's not riding solo.
It brings along a posse of blistered cherry tomatoes that are poppin' with juiciness, and, wait for it... glorious burrata!
That's right, this cheese is the smooth operator, making everything all velvety and indulgent.
Drizzle some olive oil, sprinkle some fresh basil, and you’re literally dining in the Italian countryside, mi amore!
Ingredients and Substitutions
- Cherry tomatoes - You could use grape tomatoes or even vine ripe tomoatoes if you had to.
- Red Pepper Flakes - These don't add much heat but rather a depth that's only developed with a little bit. If you don't have any or have a sensitivity, simply leave them out.
- Salted Butter - Regular butter and a pinch of salt works just fine as a replacement.
- Garlic Cloves - Fresh garlic adds so much flavor so I don't recommend using jarred shelf stable garli.
- Trader Joe's Ricotta & Lemon Zest Ravioli - These are some of my fav trader joe's raviolis. But truth be told, you could use any of your fav trader joe's raviolis!
- Burrata - Ricotta, goat cheese or even boursin would also make great substitutions.
- Basil - Fresh basil adds so much flavor. If you don't have any or don't want to go to the store, don't worry about it. It'll still be delish!
- Lemon Zested - Lemon zest adds just the right amount of citrus without it being too tart. If you don't have any lemons, just leave it off.
- Finishing Olive Oil - I get asked every single day what kind of finishing oil I use and the answer is always GRAZA!
How to make it
Making these Trader Joe's raviolis is super easy and doesn't take a lot of time.
First things first, get a large pot of salted water boiling.
Meanwhile, add olive oil, cherry tomatoes, red pepper flakes and a pinch of salt to a large, heavy bottomed sauce pan over medium heat.
Cook down for 15-20 minutes, stirring every so often, until tomatoes begin to burst.
Feel free to also smash any tomatoes that haven’t burst on their own with the back of a spatula.
Once jammy and thick, add butter and garlic and cook down for 5 more minutes.
Add uncooked raviolis to the boiling water and cook util they’re floating and puffed up.
Add cooked raviolis to the burst tomato sauce along with a ½ cup of pasta water.
Cook for 1 more minute to help the sauce stick to the raviolis.
Turn off the heat and add burrata, torn into pieces on top.
Finish with a drizzle of finishing oil, basil, lemon zest, flaky salt and fresh cracked pepper.
