This adapted Chicken Shawarma Plate is perfect for an easy weeknight dinner. Not only is this recipe made on a sheet pan but it’s also ready in less than 30 minutes. Below, I’ll teach you how to make it and will share some easy adaptions to customize your plate with what you have!

Backstory
Whenever Jerm and I travel, we make it a mission to find the best shawarma around.
We legit go into every single little kebab shop searching for the one that reigns supreme.
His love for Lebanese food is unmatched! And it's honestly one of my favorite parts of traveling with my husband.
But since we can't travel these days, I'm going to continue recreating recipes from our adventures.
To make authentic shawarma, I recommend checking out my favorite Lebanese blogger Yumna from Feel Good Foodie.
But if you want to make my adapted version that's made on a sheet pan, I'll show you how!
Let's be real, I dream of owning a kebab machine but that's not doable in our tiny house.
So instead, my recreation made with one sheet pan and is ready in less than 30 minutes
And if you don't have all of these ingredients on hand, don't sweat it!

Ingredients
Here's what you'll need to make the shawarma - everything you need for the plate will be at the end of this post!
- cumin
- garam masala
- paprika
- turmeric
- kosher salt
- boneless skinless chicken breast
- bell peppers
- onion
- olive oil
- cilantro
How to make it
Although this shawarma plate recipe looks complicated, it's actually pretty easy!
To begin, you'll want to crank your oven to 400F degrees.
Next, grab a small bowl and combine cumin, garam masala, paprika, turmeric and kosher salt.
Then, pull out a large baking sheet and add the sliced chicken, sliced peppers, and onion.
Drizzle everything with olive oil and pour on the spice blend from step 1.
Thoroughly toss everything together and arrange evenly on a baking sheet. This will help everything cook evenly.
Put the sheet pan in the oven and set your timer for 20-25 minutes. Start prepping the rest of the meal.
While the chicken is cooking, make your cucumber salad. To do so, toss together cucumber, tomato, olives, olive oil, salt and a little lemon juice and set aside.
Now get your rice ready. To make my life a little easier, I use the frozen brown rice from Trader Joes. It is ready in 3 minutes and it is super good! It's actually one of my favorite short cuts.
If you're using regular brown rice, that works perfectly, too!
When it's cooked through, fluff it with a fork and add crumbled feta, splash of olive oil, some salt and some lemon juice. Set aside.
At this point, the chicken is probably ready. If you'd like it a little more crispy, feel free to turn on the broiler for a few minutes to crisp it up.
Now it's time to toss the sheet pan shawarma with fresh chopped cilantro.
Give it a taste and add more salt if needed.
Ok, now that everything is ready, let's build the plate!
Since this recipe makes 4 servings, just divide everything equally onto 4 plates. Or if there's just you and/or someone, build a plate and put the rest in meal prep containers.
Add the sheet pan shawarma, the feta rice, the cucumber salad, some hummus, toasty pita, and whatever sauces you'd like!
I personally like having labneh, mango chutney and toum to dip everything in!
Adaptations
One of the things that I can't recommend enough for making a big recipe like this is to make it your own!
If you don't have brown rice, try pairing it with yellow rice, French fries, rice pilaf or even these spicy Lebanese potatoes.
If you want to use other sauces, you can try hummus, labneh, muhammara, baba ganoush, toum, tzatziki, or raita.
When it comes to salad, I like having something fresh on there, but you could also try a nice chick pea salad, some shaved marinated cabbage, tabbouleh, stuffed grape leaves, or the like!
Pairings
Although this shawarma plate is totally a meal on its own, you can also pair it with other tasty dishes!
I recommend trying it with my turmeric cauliflower salad or some tahini roasted broccoli.
You could also try my air fryer potato wedges and toss them in berber spice or some harissa!

Chicken Shawarma Plate
Ingredients
FOR THE SHEET PAN CHICKEN SHAWARMA
- 2 teaspoon cumin
- 2 teaspoon garam masala
- 1 teaspoon paprika
- 1 teaspoon turmeric
- ½ teaspoon kosher salt
- 1.5 lbs boneless skinless chicken breasts sliced
- 2 bell peppers cut into thin strips
- 1 onion cut into thin strips
- ¼ cup olive oil
- ¼ cup cilantro chopped
FOR THE CUCUMBER SALAD
- 2 small english cucumbers chopped
- 2 vine ripe tomatoes sliced
- ¼ cup pitted olives
- 2 tablespoon olive oil
- ⅛ teaspoon kosher salt
FOR THE FETA RICE
- 2 cups cooked brown rice
- ¼ cup crumbled feta
- 2 tablespoon olive oil
- ⅛ teaspoon kosher salt
- 1 teaspoon lemon juice
FOR THE SHAWARMA PLATE
- 1 recipe sheet pan shawarma chicken
- 1 recipe cucumber tomato salad
- 1 recipe feta rice
- 1 cup hummus prepared
- 2 pieces of toasted pita or naan cut into triangles
- 4-6 tablespoon garlic sauce or labneh
Instructions
FOR THE SHEET PAN CHICKEN SHAWARMA
- Preheat oven to 400f degrees.
- Combine cumin, garam masala, paprika, turmeric and kosher salt in a small bowl.
- Put the sliced chicken, sliced peppers, and onion on a baking sheet and drizzle with olive oil and the spice blend from step 1. Toss everything together and arrange evenly on a baking sheet.
- Bake for 20 minutes or until the chicken is cooked through and parts are beginning to brown. Turn on the broiler for 2-3 minutes to get them a little more crispy and browned.
- Remove from oven and toss with cilantro. Set aside and build plate.
FOR THE CUCUMBER SALAD
- While the chicken is cooking, toss together all ingredients and set aside.
FOR THE FETA RICE
- While the chicken is cooking, toss together cooked brown rice, feta, olive oil, salt and lemon and set aside.
FOR THE SHAWARMA PLATE
- This recipe makes 4 shawarma plates.
- To assemble each one, equally distribute chicken shawarma, cucumber tomato salad, feta rice, hummus, naan and garlic sauce or labneh.
