And let’s be honest, anything called crack corn dip is going to be dangerously addictive... but since it's not the nicest name, I've renamed it Cool Ranch Corn Dip - because it seriously tastes just like a cool ranch dorito but in dip form!
You can serve it chilled for a creamy texture, or pop it in a slow cooker on low heat for a warm, melty version.
Either way, you can pair it with tortilla chips, corn chips, or even fresh veggies like celery sticks and bell peppers for the ultimate dipping experience.

Ingredients & Substitutions
- Southwestern Corn: If you can’t find this, use Mexican-style corn or fresh corn kernels from ears of corn. If you're using fresh corn, just make sure to grill it either on a grill or on a grill pan until it's nice and charred. A can of Southwestern corn also includes grilled poblano peppers (the green peppers) and red bell peppers. Also, depending on the brand, it might also be referred to Mexi-corn.
- Green Chilies: You can also use Rotel tomatoes for an extra pop of flavor.
- Sour Cream: Swap with Greek yogurt for a lighter option. You could also make a cream cheese mixture with half cream cheese (room temperature makes it easier to mix) and half sour cream. I recommend this route if you're making a hot corn dip so it holds up better under heat.
- Shredded Cheddar: Try pepper jack, Monterey jack, or a mix of both for extra cheesiness. White cheddar is also delicious in this dip.
- Scallions: Also known as green onions, these add freshness and color. Chives also work just fine.
- Pickled Jalapeños: These are optional but they add such a good spice to the dip base. You can also use fresh jalapeños if you like more heat.
- Ranch seasoning: This is the secret ingredient that brings everything together. However, if you wanted to make a Mexican corn dip recipe, swap the ranch seasoning for a packet of taco seasoning. Then add in some of the optional additions below!
- Optional Additions: If you want to tweak this into more of a mexican corn dip, try adding fresh cilantro, red onion, black beans, lime juice, and a dash of hot sauce, A sprinkle of garlic powder and chili powder are also nice for a little spicy kick.
How to Make It
Making this creamy crack corn dip is incredibly easy. All you have to do is prep the ingredients, add them to a bowl and mix! I think it's best to let the flavors of this corn dip meld and come together for at least 30 minutes before serving.
PREP INGREDIENTS: Add all ingredients (except 1 tablespoon of reserved green onions) to a large mixing bowl.
MIX IT UP: Give everything a good stir until fully combined.
LET IT SIT: This step is optional - because the dip mixture is still delicious when you eat it right away... but if you have time, it's best to let the flavors meld and come together for at least 30 minutes before serving.
SERVE & GARNISH: Transfer to a shallow bowl or prepared baking dish and top with the reserved scallions.
PAIR & ENJOY: Serve with tortilla chips, corn chips, celery sticks, or fresh veggies. In my opinion, the "all dressed" chips or BBQ chips are my favorite crispies to serve with this original recipe!

- 2 15.25 oz cans Southwestern Corn drained (sometimes also called Mexicorn depending on brand)
- 1 4 oz can Diced Green Hatch Chiles
- 2 cups Sour Cream
- 1 8 oz bag Sharp Cheddar shredded
- 1 bunch Green onion minced with 1 tablespoon reserved
- ⅓ cup Pickled Jalapeños chopped (Optional)
- 1 1 oz package Ranch Dressing Seasoning
Instructions
- Add all of the ingredients (besides the 1 reserved tablespoon of scallions) to a large bowl and mix it together.
- Pour into a serving bowl and top with remaining scallions.
- Serve with chips of your choice! I recommend the All Dressed Ruffles or Wilde Protein BBQ Chips because the flavor combo can’t be beat!
