Ingredients & Substitutions
- Boneless New York Strip Steak: New York strip steaks are a great choice for their balance of flavor and tenderness when preparing cubes of steak. Swap with filet mignon, ribeye steak, top sirloin steak, flat iron steak, tri-tip steak, beef tenderloin or skirt steak if preferred. Leaner cuts of beef do work but I recommend opting for one of the juicy steaks above. Just make sure you choose a high quality good steak for optimal flavor.
- Kosher Salt: Essential for enhancing the natural flavor of the steak. Regular salt works too, but kosher salt is ideal for even cooking and flavor.
- Fresh Cracked Black Pepper: Adds a subtle kick and pairs beautifully with the garlic butter sauce.
- Garlic Powder: Perfect for adding extra flavor to your steak cubes before cooking.
- Avocado Oil: With its high smoke point, this ensures a good sear. Substitute with another oil with a high smoke point, like grapeseed oil.
- Salted Butter: Adds richness and creates the luscious garlicky butter sauce.
- Fresh Garlic: Minced fresh garlic is key for that bold, garlicky flavor. Fresh is best but pre-minced garlic also works in a pinch.
- Rosemary: Adds a pop of freshness. Swap with fresh parsley, green onion or other fresh herbs for a different herbaceous note.
- Demi Baguette: Creates the perfect crispy base for serving. You can also serve this easy steak bites recipe with whatever you prefer - try sweet potatoes or a fresh salad as a serving option for gluten-free people.
- Olive Oil: Drizzled over the baguette to enhance flavor and crispiness.
- Caramelized Onion & Herb Boursin: This creamy cheese adds a decadent layer to the appetizer. Swap with cream cheese, goat cheese or blue cheese if needed.
- Balsamic Glaze: For finishing. Adds a sweet and tangy contrast to the savory steak bites. You could also swap for Worcestershire sauce if you wanted it more savory.
- Flaky Salt: For a finishing touch that enhances every bite.
How to Make It
PREP INGREDIENTS: Cut the room-temperature New York strip steaks into small, bite-sized cubes. Toss the cubed steak with kosher salt, black pepper, and garlic powder in a large bowl to coat evenly.
SEAR THE STEAK: Heat a large cast iron skillet over medium-high heat. Add avocado oil and allow it to heat until almost smoking. Add the small pieces of steak cubes in a single layer and cook for 1-2 minutes on each side to get a beautiful sear. Remove the steak pieces and set them aside.
MAKE THE GARLIC BUTTER SAUCE: Turn off the heat and add salted butter, fresh garlic, and rosemary to the hot pan. Stir to scrape up browned bits from the bottom of the cast iron pan creating a garlicky butter sauce.
TOSS STEAK IN BUTTER: Add the steak back into the pan and toss to coat in the melted butter and garlic mixture. Sprinkle with red pepper flakes for extra flavor, if desired.
PREPARE CROSTINI: Preheat the broiler to medium heat. Lay out the baguette rounds on a baking sheet, drizzle with olive oil, and sprinkle with salt. Broil for 3-4 minutes or until golden brown.
ASSEMBLE THE BITES: Spread a layer of Boursin cheese on each piece of crostini. Add a few steak cubes on top of the cheese and drizzle with the remaining garlic butter sauce. Finish with balsamic glaze and flaky salt.
SERVE AND ENJOY: Serve immediately, garnished with fresh parsley or green onion for extra flavor. Perfect for sharing, but don’t blame me if you keep them all to yourself!
SAVE: You can place any leftover steak bites in an airtight container and keep in the fridge for up to 4 days. Use the leftover flavorful steak bites for an easy skillet meal, steak tacos, or fry them up with some eggs in a large skillet.
