This viral shaken rotisserie chicken and rice with lemon, feta, and sun-dried tomatoes is the easiest way to upgrade weeknight dinner. It's fresh, bright, and packed with Mediterranean flavor using simple ingredients.

Why You'll Love It
If you've seen the viral shaken chicken trend floating around, you already know the concept. Toss everything into one big bowl. Shake it up. Let it marinate. Suddenly dinner feels exciting again and totally doable!
This version uses rotisserie chicken to keep things quick and realistic. No raw chicken. No extra cooking or cleaning - just pull it apart and go.
The warm rice absorbs the lemon juice and olive oil instantly. The sun-dried tomato oil coats every grain. The Feta softens slightly and melts into the mix and adds brightness. And a little fresh dill adds a little something else without overpowering the bowl.
Best of all, this Mediterranean chicken and rice bowl works warm or chilled. It's perfect for meal prep lunches. It's also ideal for those nights when you barely have the energy to decide what's for dinner. You can bulk it up with cucumbers, cherry tomatoes, olives, or a dollop of tzatziki. Or leave it as written and enjoy the balance of salty feta, tangy lemon, and juicy shredded chicken.
It's high protein. It's flavor-packed. And it comes together in under 15 minutes. Honestly, this is the kind of viral trend I can get behind!

Ingredients & Substitutions
This shaken rotisserie chicken and rice uses simple, high-impact ingredients. Each one brings serious flavor with minimal effort.
- Rotisserie Chicken: Pulled apart for convenience and juicy texture. Leftover grilled chicken also works. If you want to make the chicken yourself, try my greek yogurt marinated chicken or my mediterranean chicken meatballs.
- Cooked Rice: White rice is classic here. Jasmine, basmati, or brown rice are great options too. Day-old rice is perfect. If you're in a pinch like me, use the microwaveable rice - I used two packets.
- Sun-Dried Tomatoes in Oil: These add deep, tangy richness. Include some of the oil for maximum flavor. A little oil is also added for extra flavor!
- Athenos Feta: Creamy, salty crumbles that balance the lemon and dill. The ready-to-use feta makes this even faster.
- Fresh Dill: Bright and slightly sweet. Fresh parsley can be swapped if needed.
- Olive Oil: A good olive oil ties everything together and helps the rice absorb flavor.
- Kosher Salt: Enhances the chicken and rice without overpowering the feta.
- Lemon Juice: Fresh lemon juice lifts the entire bowl and adds Mediterranean flair.
- Fresh Cracked Pepper: Adds subtle heat and depth.
How to Make It
This recipe is truly mix, marinate, and serve. The short rest time is what makes it taste intentional.
- ADD EVERYTHING: Add pulled chicken, cooked rice, sun-dried tomatoes (plus a little oil), Athenos Feta, dill, olive oil, lemon juice, kosher salt, and fresh cracked pepper to a large bowl.
- MIX WELL: Stir until evenly combined. Make sure feta and tomatoes are distributed throughout.
- LET IT MARINATE: Let the mixture sit for a few minutes. This helps the lemon juice and oil soak into the rice.
- SERVE: Serve warm or at room temperature. Top with extra dill or feta if desired.
