This Marry Me Beans recipe is creamy, cozy, and absolutely bursting with flavor. It's the kind of comforting white bean dish that makes you fall in love at the very first bite.

Why You'll Love It
If you loved my Marry Me Tortellini that pulled in over 7 million views on social media, then buckle up. These Marry Me Beans are the high-fiber rebound your heart wasn't ready for but absolutely needed. They're creamy, dreamy, and packed with cannellini beans that soak up every drop of that delicious sauce. The combination of creamy beans, parmesan cheese, and olive oil creates the richest, most comforting texture. It's like the creamy Tuscan sauce of your dreams but with a nutritious twist.
This dish hits that perfect weeknight dinner vibe. It uses pantry staples like vegetable broth, sun-dried tomatoes, red pepper flakes, dried oregano, and lots of minced garlic. Everything simmers in a dutch oven until it becomes a cheesy sauce that clings to every bean. Serve it with crusty bread, baby spinach, or fresh basil for extra flavor. The first bite is always warm, melty heaven.
And because we're talking fiber, here's the fun part. Just like dietary fiber keeps things moving, fiber internet does the same. Wire 3 Fiber Internet keeps my uploading and non-users streaming, scrolling, and saving recipes without buffering and they were sweet enough to sponsor this post! High in fiber. High in speed. That's the best part. These creamy sun-dried tomato beans give the same energy... smooth, fast, efficient, and always satisfying.
These creamy cannellini beans (or butter beans!) work great with all types of beans, so feel free to swap navy beans, lima beans, or butter beans next time. You can even make a vegan version using vegan butter, coconut milk, coconut cream, nutritional yeast, or cashew cream for a silky, dairy-free twist. This will join your regular rotation fast.

Ingredients & Substitutions
This vegetarian version of my marry me tortellini recipe is flexible, forgiving, and filled with simple ingredients with big flavor. Exact ingredient amounts can be found at the bottom of this post.
- Olive Oil: Adds richness and helps bloom the dried oregano and chili flakes.
- Garlic: Fresh minced garlic gives the creamy sauce its bold aroma.
- Sun Dried Tomatoes: Use chopped sun-dried tomatoes packed in sundried tomato oil for tangy flavor. You could also swap for tomato paste if you don't have tangy sun-dried tomatoes on hand.

- Red Pepper Flakes: Use chili flakes for more heat.
- Vegetable Broth: Use vegetable stock or chicken broth for extra flavor.
- Cream Cheese: Creates the creamy texture.
- Cannellini Beans: Any cans of beans work - navy beans, lima beans, or butter beans. Feel free to swap for 2 cans of butter beans if you prefer.
- Heavy Cream: Adds richness. Coconut milk or cashew cream works for a vegan version.
- Parmesan Cheese: Use vegan parmesan or pecorino if desired.
- Spinach: Baby spinach melts perfectly into the creamy beans.

What to Serve It With
I love serving these one pot marry me beans with a big slab of crusty bread that's been pan fried with olive oil. You could also serve them with this fresh tomato burrata caprese or my greek yogurt marinated Grilled chicken breasts. But honestly, it's good with anything that can scoop, dunk, or absorb this creamy sun-dried tomato sauce.
