Ingredients & Substitutions
- Chicken breast: Thinly sliced into strips so it cooks quickly and evenly. You could also use boneless skinless thighs for more richness. Or if you're not into meat, leave it out and add more veggies or tofu!
- Bell Peppers: Adds a pop of sweetness and color. Feel free to swap with any other color bell peppers you have.
- Red Onion: I love how these caramelize slightly in the oven - they're so good! But if you don't have red onion, swap it for any other variety of white/yellow onion and you'll be just fine.
- Olive oil: Helps everything roast up golden and delicious. You could use avocado oil or another neutral oil.
- Taco seasoning: Use your favorite packet or homemade blend.
- Athenos Tajin Feta Crumbles: The star of the show! Tangy, salty, and spicy all in one. If you can’t find this exact one, use regular feta and sprinkle Tajin on top.
- Lime: Brightens and balances all the rich and spicy flavors. A must for finishing this dish!
- Cilantro: Adds freshness and that classic Mexican flair. If you're one of the poeple whose genetics makes it taste like soap, leave it out!
- Tortillas & Baja chipotle sauce: For serving. You can also serve this over rice, greens, or quinoa if you want to switch it up.
How to Make It
PREHEAT OVEN: Preheat your oven to 400°F.
PREP INGREDIENTS: Add the sliced chicken breast, red pepper, yellow pepper, and red onion directly to a baking dish or sheet pan.
SEASON EVERYTHING: Drizzle with olive oil, then sprinkle on the taco seasoning. Toss until everything is evenly coated.
ADD FETA: Spread the mixture out into an even layer, then sprinkle the Tajin feta crumbles over the top.
BAKE: Bake for 30 minutes, or until the chicken is cooked through and the veggies are slightly caramelized.
FINISH WITH FLAVOR: Remove from the oven, squeeze fresh lime juice over everything, and toss with chopped cilantro.
SERVE & DRIZZLE: Serve warm with tortillas, rice, or salad and drizzle with my Baja chipotle sauce for the final touch.

Ingredients
- 1.5 lbs Chicken breast sliced into thin strips
- 1 large Red Pepper sliced into thin strips
- 1 large Yellow Pepper sliced into thin strips
- 1 large Red Onion sliced into thin strips
- 2 tablespoon Olive Oil
- 1 1oz packet Taco Seasoning
- 1 5oz container Athenos Tajin Feta Crumbles
- 1 medium Lime juiced
- ¼ cup Cilantro Leaves packed and roughly chopped
- Tortillas for serving
- Baja Chipotle Sauce for serving
Instructions
- Preheat oven to 400°F.
- Add the strips of chicken, red and yellow peppers, and red onion directly to a baking dish. Drizzle with olive oil.
- Sprinkle with taco seasoning and toss until everything is well coated.
- Spread mixture into a single, even layer. Sprinkle Tajin feta crumbles evenly on top.
- Bake for 30 minutes, or until chicken is cooked through and vegetables are roasted.
- Remove from oven, drizzle with lime juice, and toss with chopped cilantro. Toss so the melty cheese gets all over everything and be sure to scrape up any crispy cheesy bits on the bottom of the pan for extra goodness.
- Serve with tortillas, rice, or salad, and top with Baja chipotle sauce.
