What is a Marry Me Grilled Cheese?
This marry me grilled cheese is inspired by the viral marry me chicken dish.
Flavored by sun dried tomatoes, fresh spinach, and a herbaceous cream sauce, this trendy recipe is absolutely delicious.
And since I'm the grilled cheese queen, I figured I might as well turn it into a sandwich!
It's the perfect vegetarian grilled cheese that's big on flavor while still being easy to make.
Oh, and if you haven't had the Roth Tomato Basil Havarti, you have to find it because it seriously tastes JUST LIKE the sauce in marry me chicken once it melts. It's magical!

Ingredients & Substitutions
- Tomato Basil Havarti: If you can't find the tomato and basil havarti from Roth Cheese, you can use another one of their havarti cheeses. But if you can find it, it's truly magical and it MAKES this sandwich. When it melts, it tastes just like the cheese sauce from my viral marry me tortellini recipe.
- Sun Dried Tomato: You can also use roasted tomatoes if you dont like sun dried tomatoes.
- Sautéed Spinach: Fresh spinach works best - quickly wilted in a pan with a little bit of olive oil and salt. If you don't like spinach, you could swap it for basil or even arugula or maybe some finely diced cooked kale.
- Sourdough Bread: You can swap sourdough bread for whatever bread you choose.
- Salted Butter: If you're using unsalted butter, just add an extra pinch of the garlic salt to make up for it.
- Garlic Salt: Garlic powder or Italian season work well if you don't have garlic salt.
How to make it
Prep the Ingredients: To make the cheese melt faster, I recommend shredding it. The shreds mean there is more room for hot air to get between the pieces of cheese which makes the cheese melt quicker and more evenly. When it comes to the spinach, all you need to do is take a handful of fresh spinach and throw it in a pan with a little bit of olive oil and salt. Cook it for 2 minutes until it wilts then it's ready to go.
Build the Sandwich: Add half of the cheese to one slice of bread, then add sun dried tomatoes, wilted spinach, and the rest of the cheese. Place the other piece of bread on top and butter the exterior of the sandwich. Sprinkle the whole thing with garlic salt and get ready to grill it.
Grill the Sandwich: Heat a large cast iron skillet or frying pan over medium and add the buttered sandwich. Cook for a few minutes on each side until the exterior is completely golden brown and all the cheese has melted. Remove from the heat and let rest for about 1 minute before cutting in half and serving.

Marry Me Grilled Cheese Sandwich

- 2 slices Sourdough Bread
- 4 oz Roth Tomato Basil Havarti shredded
- 3 tablespoon Sautéed Spinach
- 2 tablespoon Sun Dried Tomatoes
- 2 pats Salted Butter
- ¼ teaspoon Garlic Salt
Instructions
- Add half of the cheese to one slice of sourdough and top with spinach and sun dried tomatoes. Add the rest of the cheese and the top piece of bread.
- Butter the exterior of the sandwich and sprinkle with garlic salt.
- Add to your frying pan and cook on medium heat until both sides are golden brown and the cheese has melted.
- Remove from heat and let rest for a minute or two before serving.
