This dill pickle grilled cheese recipe is one of my favorite grilled cheese sandwiches! It's the perfect quick and easy comfort food made with gooey cheese, tart pickle slices and crunchy potato chips to make it extra pickle-y for the pickle lover in your life!

This recipe works because the tart, brininess of the pickle contrasts perfectly to the rich, creaminess of the gooey cheese.
The acid from the pickles cut right through the fat of the cheese and makes the whole thing taste amazing.
Plus, the crunchy, buttery exterior of the bread holds it all together to make it the complete package and the gooey cheese does not dissappoint!!
I mean who doesn't love a grilled cheese with pickles?!
Ingredients and Substitutions
- Bread - I prefer sourdough bread but you could use any type of slices of bread you prefer or have on hand. Some other types of bread that work well are white bread, rye bread, multigrain or any homemade bread you like to make.
- Cheese- If you don't have dill havarti, you could use another cheese such as sharp cheddar cheese, muenster, pepperjack, monterey jack, american cheese, regular havarti or even mozzarella. If you were using another type of cheese, you could also be extra and use some chopped up fresh dill. But honestly the Dill havarti just adds another level of pickle power and I highly recommend it. And although I recommend shredding the cheese to get the perfecly gooey cheese texture, you could also use a slice of cheese if that's what you have.
- Pickles - I'm using Grillo's Dill Pickle Chips as the star of the show because I love how they use fresh dill to really get the flavor across... but you could use any brand of sliced pickles you prefer. I just recommend using a paper towel to dab the excess moisture off so the sandwich stays crispy. Also, if you prefer sweet pickles, you can definitely swap them out for bread and butter pickles
- Butter - To make a good grilled cheese, I think it's important to use salty butter on your bread slices. But if you've only got unsalted butter, just be sure to add another pinch of salt to make up for for it. You could also use mayo or olive oil if you prefer.
- Potato Chips - This is totally optional but I love how these potato chips add another layer of pickle flavor and crunch for.
How to make it
Making a grilled cheese with pickles is very easy!
Prep Ingredients: You'll want to begin by prepping the ingredients for your grilled cheese sandwich. Shred your cheese or grab whatever slice of cheese (3 to be exact) you're using and blot your sliced pickles (dill or bread and butter pickles) with a paper towel to remove excess moisture.
Build Sandwich: Add half of the shredded Dill Havarti to one slice of bread then top with slices of pickles and the rest of the dill havarti. Now add the remaining piece of bread on top and butter the outside of the bread.
Cook Sandwich: Cook the sandwich, butter side down, in a panini press, grill pan, or a heated cast iron skillet over medium-low heat. Cook for a few minutes on each side until the bottom of the bread is golden brown and the cheese melts completely. If you notice the cheese has melted before the bread has, bump it up to medium heat.
Add Chips: If you're adding potato chips, remove from heat and carefully open up the sandwich. Place the chips inside then close the sandwich, then slice in half and enjoy!

- 2 pats Salted Butter
- 1 handful Dill Pickle Potato Chips
