Ingredients and Substitutions
Vanilla Protein Powder - I love using Beam's Vegan Vanilla Protein Powder because it makes this mixture taste JUST like a butterfinger! It's one of my favorites and I highly recommend trying it if you haven't already.
Peanut Butter - You can use crunchy or smooth peanut butter - whatever you choose! You could also swap it for your favorite peanut-free nut butter of choice.
Honey - I'm using a local honey but you could also use agave or maple syrup although it won't taste the same.
Rice Krispies - This just adds the perfect crunch factor to the filling - if you wanted to swap it for something try toasted coconut, crushed frosted flakes, or puffed quinoa.
Dates - I'm using big fat medjool dates. You could remove the seed yourself or buy them without seeds. If you don't like dates, you could roll the mixture into a ball and dunk in chocolate.
Dark Chocolate - If you don't like dark chocolate, you could use milk chocolate, white chocolate or even tahini.
Flaky Salt - This just adds such a nice finish to each one. If you don't have flaky salt, you can either get some or use a tiny bit of kosher salt.
How to make it
Make the Filling: Mix together protein powder, crunchy peanut butter, honey, and Rice Krispies until everything is mixed together and combined.
Prepare & Stuff Dates: Remove the pit from about 20 large dates and stuff with 1 teaspoon or so of the protein mixture. Place them each one on a lined baking sheet or large plate that can fit in your fridge.
Prepare Chocolate: Once they’re all stuffed, add your chocolate and coconut oil to a microwave safe glass dish and microwave for 30 seconds at a time, stirring between sessions, until chocolate is melted and hot.
Add Final Toppings: Drizzle melted chocolate over the top of the stuffed dates and finish with a sprinkle of flaky salt.
Refrigerate: Place the baking sheet with all of the chocolate drizzled dates in the fridge for at least 30 minutes. Once the chocolate hardens, you can transfer them to a ziplock bag of tupperware and store in the fridge for up to 2 weeks.

Ingredients

- ⅓ cup Rice Krispies
- 24 oz Dates (or about 30 medium sized dates or so)
- ½ cup Dark Chocolate Chips
- 1 teaspoon Coconut Oil
- 1 teaspoon Flaky Salt
Instructions
- Mix together protein powder, crunchy peanut butter, honey, and Rice Krispies until everything is mixed together and combined.
- Remove the pit from about the dates and stuff with 1 teaspoon or so of the protein mixture. If dates are larger, use more.
- Once they’re all stuffed, add your chocolate and coconut oil to a microwave safe glass dish and microwave for 30 seconds at a time, stirring between sessions, until chocolate is melted and hot.
- Drizzle melted chocolate over the top of the stuffed dates and finish with a sprinkle of flaky salt.
- Place in the fridge for at least 30 minutes for the chocolate to harden before serving or adding to a ziplocok bag or tupperware.
