Ingredients and Substitutions
- Cherry Tomatoes - Grape tomatoes also work!
- Olive Oil - Any neutral oil will work although olive oil is best for this recipe!
- Athenos Feta - Nothin' better! But if you don't like feta, you can try goat cheese or boursin.
- Athenos Hummus - I'm sticking to original hummus but you can use any flavor of hummus.
- Garlic Cloves - this adds a really nice slightly sweet roasted garlickly depth. You could leave it out if you're not into garlic!
- Red Pepper Flakes - These are more for depth than spice. Leave them out if you're scared of heat!
- Pasta - You can use any shape you'd like!
- Basil - This is mainly for finishing but you could swap it for any herb of your choice.
How to make it
Making hummus pasta is super easy!
Begin by preheating your oven to 400F degrees.
Then toss tomatoes with olive oil and a hefty pinch of salt in a 13x13” baking dish.
Make a little space in the middle of the tomatoes for the hummus.
Then place the feta on top of the hummus and press it down.
Add garlic cloves to the top of the hummus.
Drizzle everything with olive oil and a pinch of red pepper flakes.
Bake for 1 hour.
At the 30 minute mark, get your salted pasta water boiling. Prepare the pasta al dente and be sure to reserve ½ cup pasta water for later.
Once the tomato mixture is done, remove it from the oven and immediately stir it up until smooth and creamy - making sure to crush any whole garlic cloves and tomatoes.
Pour in the cooked pasta and toss everything together.
If it’s dry, stir in ¼ cup pasta water to loosen it up. If it’s still too dry, add the remaining ¼ cup pasta water or if it looks good, discard it.
Finish with a sprinkle of basil before serving.
