These coconut kale noodles are one of my favorite quick and easy weeknight dinner recipes. All you need is coconut oil, coconut aminos, fresh kale, and noodles (I’m using Trader Joe’s Squiggly noodles). I like to top mine with crispy chili oil and sesame seeds but that’s optional.

Imagine slurping down tender noodles slathered in the rich, slightly sweet, and savory magic of coconut aminos, then bumped up a notch with hearty, emerald-green kale.
It's like your comfort food fave and superfood goals crashed a party together—and let me tell you, it's the kind of culinary bash that's Instagram-worthy and taste bud-approved.
To make it even more exciting, I love topping mine with spicy crispy chili oil and toasted sesame seeds for texture.
So, next time you're craving some noodle love, swap the takeout menu for this sassy dish and let your inner foodie do a happy dance!

Ingredients and Substitutions
- Coconut Oil - Coconut oil adds so much flavor to this dish so I don't recommend swapping it out.
- Kale - Any hearty green will work - and these are also delicious if you don't use kale
- Trader Joe’s Squiggly Knife Cut Noodles - These noodles are my noodle of choice these days but you could absolutely swap them for whatever your heart desires.
- Coconut Aminos - If you don't have coconut aminos are aren't sure what they are - you can think of it as gluten-free soy sauce that's slightly sweetened. If you don't have any, you can swap it for 3 tablespoon soy sauce and 1 tablespoon brown sugar.
- Crispy Chili Oil - I love adding crispy chili oil to everything! But if you don't have it, you can totally leave it out or swap it for sriracha.
- Toasted Sesame Seeds - These roasted sesame seeds are totally optional but if you don't have any, just leave them off.

How to make it
Making these coconut kale noodles is super simple!
First, you'll want to get a pot of water boiling for the noodles.
Meanwhile, grab another frying pan and add coconut oil, kale, and a pinch of salt over medium heat.


Cook the kale for 2 minutes or until it turns bright green.
Now turn the heat down to medium-low on the kale and drop the noodles into the other pot of boiling water.
After cooking for a few minutes and once the noodles are tender, remove them from the water and add them on top of the kale.
I recommend not straining them so that there is still some pasta water on them.

Now add the coconut aminos on top and toss everything together over medium-low heat.
Cook for 1-2 minutes more until the noodles absorb the sauce.
When it’s time to plate them, I like adding a scoop of crispy chili oil and some toasted sesame seeds for crunch.

Coconut Kale Noodles

- 1 tablespoon Coconut Oil
- 1 Bunch Lacinato Kale about 2 cups, finely cut into thin strip
- 1 pinch Salt
- 2 packs Trader Joe’s Squiggly Knife Cut Noodles
- ¼ cup Coconut Aminos
- 1 teaspoon Crispy Chili Oil
- 1 teaspoon Toasted Sesame Seeds
Instructions
- Get a pot of water boiling for the noodles.
- Meanwhile, add coconut oil, kale, and a pinch of salt to a separate fry pan over medium heat. Cook the kale for 2 minutes or until it turns bright green.
- Turn the heat down to medium-low and drop the noodles into the other pot of boiling water.
- Once the noodles are tender, remove them from the water and add them on top of the kale - allowing excess water to go along with them. Then add the coconut aminos and toss everything together over medium-low heat.
- Cook for 1-2 minutes more until the noodles absorb the sauce.
