These Salmon Sushi Cups are such a quick and easy dinner recipe. I love tossing the salmon in sweet chili sauce because it creates a sweet and sticky caramelized glaze that is so tasty!

Ingredients
1lbSalmonskin removed and cut into small ½ inch cubes
Place cubed salmon, sweet chili sauce, and a hefty pinch of salt in a small bowl and toss.
Spray a muffin tin with nonstick spray and add a piece of nori to each cup, followed by a scoop of rice - making sure to distribute rice evenly across the cups.
Evenly distribute the salmon on top of the rice and bake for 10 minutes before turning on the broiler for another 2-3 minutes or until the salmon is cooked and the sweet chili glaze has caramelized.
Top the sushi cups with yum yum sauce, avocado cubes, sesame seeds, and a sprinkle of the crispy fried onion bits. Serve with more yum yum sauce and enjoy!
