This kale juice recipe is simply amazing. All you need is one bunch of fresh kale, a cucumber, a lemon, 2 fuji apples and a juicer. It's a sweet, tart, and refreshing green juice that's healthy AF!
What is Kale Juice?
The first few months of my pregnancy were the worst.
I had what I call the pregnancy hangover and it would roll around every day around 3pm.
I lost my appetite, I was nauseous, had a headache and just wanted to sleep forever.
Oh, and not to mention, everything I ate tasted like metal.
Not going to lie, it was a really hard time to be a chef.
The only thing I could enjoy was candy (LOTS OF IT) and white carbs.
A typical meal consisted of a a big bowl of pasta with plenty of butter and parmesan. And dessert consisted of a chugging from a box of nerds or downing 3 strawberry popsicles .
I felt like I was turning back into my picky childhood self and it was no bueno.
But now that I'm finally out of the I-wanna-curl-up-and-die phase of my pregnancy, I've gotten my appetite and tastebuds back!
And not only do I want to eat everything, I want to feel healthy and good again!
That's how and why I'm sharing this perfect kale juice recipe.
Because of my strange diet (and even though I'm taking prenatal vitamins) I'm still worried that my baby isn't getting all the proper nutrients and vitamins it needs.
So to remedy this, I've been drinking an insane amount of green juice. And over time, I've perfected it.
This blend is sweet, tart, and sooo tasty!

How to Make the Best Ever Mean Green Juice
High Quality Juicer
To make really good kale juice, you must first have the proper equipment - A HIGH QUALITY JUICER!
I've had this exact Juicer model for almost 10 years and even though it's quite bulky, it's the freakin' best. I've never had one problem with it which is sadly quite rare for a piece of kitchen equipment these days.
If you're in the market for a new one, I've also seen and heard great things about their new compact version... although I've never tried it myself.
Washed & Prepped Cold Produce
Ok, now that the juicer is out of the way, let's talk veggies!
I always try to get the highest quality vegetables available when I'm juicing.
It doesn't mean it has to be organic but it helps if it's from somewhere that doesn't coat their produce in chemicals and pesticides. Especially since we're not cooking this stuff and are digesting it raw.
Regardless of where you get it, it's still important to wash thoroughly. Fill up a big bucket of water and let everything soak in there for a bit. Then rinse, repeat, dry and refrigerate.
Refrigerating is important because it helps create a crisp, cold glass of juice that tastes amazing. It also keeps the produce fresher longer so you can make juice all week long.
When you're ready to juice, everything can go in there as is except for the apples and lemon.
Simply cut off the skin of the lemon so that you get more of a sour and less of a bitter taste.
For the apples, just cut the meat off the sides and discard the core. The apple seeds have some form of cyanide in them that can be bad for you if ingested in high doses. Don't get stressed about this though... it sounds a lot scarier than it is!
Juicing Time!
Now that everything is prepped and ready to go, let's juice!
Assemble your juicer and place a plastic bag in the juice pulp collector. This makes for easier clean-up.
Now go ahead and juice the kale, cucumber, lemon and apple on high speed and place each one in a separate cup.
- 1 bunch of kale renders about 5 oz of juice.
- 2 large fuji apples gives about 5 ⅓ oz of juice.
- 1 large cucumber gives about 8 oz of juice.
- 2 lemons is about 4 oz of juice.
Now that everything is juiced, i like to measure using this little 5 ounce measuring cup that I got forever ago at the Meathook in Brooklyn.
Now add 5 oz of kale juice, 1.5 oz of lemon juice, 5 oz of fuji apple juice and 2 oz of cucumber juice. Serve immediately and enjoy!

I absolutely love this juice! We make the same one where I work and it is to die for! There we make huge batches but go through them so fast. How long would a batch of this juice last in a fridge? I plan to make one for an upcoming surgery since I have to go on an only liquid diet for two weeks post op!

First of all, I have made a big batch of this every week for about a month and I LOVE IT!!! It’s such a good way to start the day!! By chance, have you ever tried this as a smoothie? Same ingredients, but just in the blender? I love the taste but feel like I’m wasting a lot of good nutrients by tossing the leftover ‘stuff’. Thought I’d ask professional opinion before I attempt!! 😉
