Extra Cheesy Baked Chorizo Nachos

These chorizo nachos are so delicious! Whether you serve them as an appetizer, snack or dinner, they deliver! Packed with tons of cheese, chorizo, and tasty colorful toppings, and baked until bubbling and delicious - it’s no surprise that everyone loves them!

1 9 oz bag tortilla chips 6 oz shredded jalapeno havarti divided (or pepperjack) 6 oz shredded havarti divided (or mozzarella) ½ lb crumbled chorizo cooked ¼ cup cilantro chopped ½ cup tomatoes chopped 1 medium avocado diced 3 tablespoon sour cream ¼ cup pickled jalapenos ¼ cup pickled onions flaky salt
Preheat oven to 400F degrees.
Meanwhile, place half of the tortilla chips into a cast iron pan or another oven safe baking dish - doesn’t really matter the size.
Top with 3 oz of each cheese and half of the chorizo.
Add another layer of chips and top with the remaining cheeses and chorizo.
Bake for 10-15 minutes until melty and starting to brown.
Remove from heat and top with cilantro, tomato, avocado, sour cream, pickled jalapenos, pickled onions and a sprinkle of flaky salt.
Serve immediately and enjoy!
