Ingredients and Substitutions
- Salted Butter - If you're using unsalted butter, simply add an extra pinch of salt to make up for it.
- Olive Oil - Any neutral oil will work.
- Dried Thyme - Fresh thyme also works well. You can also swap thyme for rosemary, herbs de provence or even sage.
- Onion - I'm using sweet onion but you could use red, white or yellow onion if you'd like.
- Garlic - Fresh garlic is best but you could use the jarred, pre-minced variety if you had to.
- Carrots - If you don't like carrots, you could swap them out for butternut squash or sweet potato.
- Celery - Not a fan of celery? No worries! You can leave it out or just add more onion.
- Frozen Peas - Canned peas also work. If you don't like peas, you could use green beans.
- Orzo - I don't recommend swapping out orzo since the liquid to pasta ratio is very important in this dish.
- Chicken Broth - I used chicken broth but you could use veggie broth, too.
- Rotisserie Chicken - If you're not a fan of rotisserie chicken, you could use store bought shredded chicken. Or you could chop up two chicken breasts into small pieces, season with salt, pepper, paprika and garlic powder and cook in a fry pan until tender and cooked through.
- Milk - You could use half and half or heavy cream or even an unsweetened milk alternative.
How to make it
Making this chicken pot pie orzo is a total breeze!
To begin, just add olive oil and butter to a heavy bottomed pan (I’m using a braiser) over medium heat. Once hot, add onion and a pinch of salt and cook for 4-5 minutes.
Then it's time to add the garlic, shredded carrots, celery, frozen peas and another pinch of salt and cook down for another few minutes or until the garlic is starting to get tender and fragrant and the veggies are warmed through.
Add in the uncooked orzo and the stock and stir. Once simmering, put the lid on and let cook for about 6 minutes.
Remove lid and add the chopped cooked chicken and milk and stir once more.
Put the lid back on and let the dish cook for 4 more minutes or until the pasta is al dente.
if it's still liquidy, just let the pot cook for a few more minutes. Once it's the desired consistency, add in your parmigiano and stir.
Season with salt and pepper to taste. Enjoy!

If I were making this for dinner, I would start with my ham and cheese crescent rolls or my crescent roll garlic knots.
They would also be really nicely paired with my brown sugar roasted butternut squash or these cacio e pepe green beans and carrots.

- 4 cloves Garlic finely chopped
- 1 cup Carrots shredded or chopped
- 1 cup Celery finely chopped
- 1 cup Frozen Peas
- 1 cup uncooked Orzo
- 2 cups Chicken or Veg Broth
- 1 cup Rotisserie Chicken roughly chopped or shredded
- 1 cup Milk
- ½ cup Parmigiano grated
- Salt and Pepper
Instructions
- Add olive oil and 2 tablespoon butter to a heavy bottomed pan (I’m using a braiser) over medium heat. Once hot, add onion and a pinch of salt and cook for 4-5 minutes.
- Add garlic, shredded carrots, celery, frozen peas, thyme, and another pinch of salt and cook down for another few minutes or until the garlic is starting to get tender and fragrant and the veggies are warmed through.
