Ingredients and Substitutions
- Butternut Squash - Since this is a butternut squash recipe, there's no real substitution although this recipe does work really well for sweet potato chunks!
- Olive Oil - Any neutral oil will work just fine!
- Brown Sugar - You could swap out the brown sugar for honey or maple syrup.
- Dried Rosemary - Fresh rosemary also works. I just recommend adding more than you would use for dried rosemary. If you don't like rosemary, try swapping it out for thyme, herbs de provence or even sage.
- Cinnamon - If you're not a fan of cinnamon, you could leave it out or swap it for a dash of nutmeg.
- Kosher Salt - Do not use regular table salt - it just doesn't work the same!
How to make it
Making roasted butternut squash is easy breezy, baby!
First, you'll want to chop down your squash into 1 inch cubes - making sure not to get any seeds in the mix.
While you're doing that, preheat your oven to 400F degrees.
Now add the cubed butternut squash to you baking sheet and drizzle it with olive oil.
Then add in the brown sugar, dried rosemary, cinnamon and kosher salt.
Toss everything together then evenly spread the pieces across the baking sheet.
Place on the middle rack of the oven and bake for 30-40 minutes, tossing the squash half way through.
Remove from the heat and add a drizzle of honey if desired.

- 1 medium sized Butternut Squash seeds and skin removed and roughly chopped into 1” cubes
- 2 tablespoon Olive Oil
- 1 heaping tbsp Brown Sugar
- ½ teaspoon Dried Rosemary
- ½ teaspoon Cinnamon
- 1 teaspoon Kosher Salt
- 1 tablespoon Honey **optional**
Instructions
- Preheat oven to 400F degrees.
- Add cubed butternut squash to a baking sheet and add olive oil, brown sugar, dried rosemary, cinnamon and kosher salt. Toss everything together then evenly spread the pieces across the baking sheet.
