Summer is almost over and I honestly couldn't be more ready.
Not only has it been hot as hell out there... but it also feels like a new season will bring some much needed changes.
So to close out this summer, I'm sharing this beautiful and easy fig tart recipe!
On the bottom, store bought puff pastry is the base. It comes from the frozen food section and takes under 15 minutes to prepare.
On top of that is a beautiful cheesy layer that's made with whipped goat cheese.
Within the goat cheese, I add honey and truffle oil and heavy cream to make it extra fluffy and delicious.
On top of it all is my favorite summer fruit - fresh figs!
These pretty little babies are quartered and piled on thick.
To make them pop, I add a drizzle of balsamic glaze, fresh basil and flaky salt.
It's truly heaven and you're going to love it!
Ingredients & Substitutions
For the Honey Whipped Goat Cheese
- Goat Cheese - Any brand fresh goat cheese (also known as chevre!) will work. My fav is of course Roth Cheese!
- Heavy Cream - Since heavy cream gives the "whipped" texture, there is no real substitution for it.
- Honey - Use whatever kind of honey you'd like!
- Truffle Oil - I'm using Truff's Truffle oil and I love it. It tastes like fresh truffles and the packaging is beautiful.
For the Fig Tart
- Puff Pastry - Puff pastry is a pain to make yourself so I recommend buying the frozen kind and letting it defrost. You typically get two squares so feel free to double the batch or save it for something else.
- Egg - This is optional. When you whisk the egg and milk together and brush it on the puff pastry, it gives it a golden brown glossy color. You totally don't have to do this if you don't have it or choose not to.
- Milk - This is also optional. When you whisk the egg and milk together and brush it on the puff pastry, it gives it a golden brown glossy color. You totally don't have to do this if you don't have it or choose not to.
- Fresh Figs - I think fresh figs are best for this recipe but you could also sub them out for fresh strawberries, peaches, or even raspberries.
- Balsamic Glaze - You can make the glaze yourself but I like using the store bought balsamic glaze as it's quick, easy and delicious.
- Fresh Basil - Basil is also optional. I love the fresh herb notes that basil gives it but you could also use mint if you don't like basil!
- Flaky Salt - I love finishing most sweet dishes with a sprinkle of flaky salt because it really just makes the flavor pop! If you don't have Maldon, just leave it off.
How to make honey whipped goat cheese
Making honey whipped goat cheese is SUPER simple!
All you need is goat cheese, honey, and heavy cream.
I chose to add a little truffle oil just to make it even more exciting. If you don't like truffle, totally leave it out. And if you're obsessed with truffle oil, feel free to add more!
Once the goat cheese is room temp, add it to a food processor and add the heavy cream, honey and truffle oil.
Close the lid and blend for 1-3 minutes or until a light and fluffy consistency is reached.
Give it a taste and adjust for more sweetness or more truffle.
Now it's ready to use!
And if you don't use it all, you can totally keep it in the fridge in an air tight container for up to a week.
How to make this easy fig tart
Since I love to share easy-to-follow recipes, I can assure that making this fig tart is a total breeze!
The first thing you'll want to do is preheat your oven to 400F degrees.
While it's heating up, place one sheet of thawed out puff pastry on a parchment paper lined baking sheet.
Then grab a sharp knife (such as a pairing knife) to score a “frame” around the perimeter of the puff pastry. This will create a designated crust vs. filling area.
Now take a fork and poke holes in the middle of the puff pastry. This will help it from puffing up too much.
After that, it's time to make the eggwash. Pour 1 egg and 1 tablespoon milk into to a small bowl and whisk. Brush this mixture over the top of the puff pastry. This step helps create a shiny golden crust on the puff pastry.
Now bake for 12 minutes or until golden brown then remove from the oven and let it cool completely.
While it's baking, be sure to make the honey whipped goat cheese.
The recipe for that is in the recipe card at the bottom of this post.
Once the puff pastry has cooled, add the honey whipped goat cheese to the middle of it.
Using a large spoon, smooth it out so it's evenly spread across the puff pastry.
Now it's time for the toppings.
Top with honey whipped goat cheese with fresh figs, a drizzle of balsamic glaze and fresh basil.
Cut into squares and finish with a sprinkle of maldon salt if you have it.
And that's it - you're ready to serve!
