Peach & Prosciutto Sandwich with Candied Jalapeño Feta Spread
This Peach & Prosciutto Sandwich with Candied Jalapeño Feta Spread is sweet, salty, spicy, and creamy all in one bite. Perfect for summer picnics, beach days, or an easy no-cook dinner.
Add feta, Greek yogurt, olive oil, lemon juice, garlic, salt, and pepper to a food processor. Blend until mostly smooth and creamy. Stir in candied jalapeños by hand.
Split baguette in half and drizzle the cut sides with olive oil. Sprinkle with garlic salt. Broil oil-side up for a few minutes until golden and toasty. Remove from oven and cool slightly.
Spread a generous layer of whipped feta onto the interior of the toasted bread. Top with arugula, peach wedges, pickled red onions, prosciutto, and torn basil.
Wrap the sandwich in butcher, wax, or parchment paper to hold it together. Slice in half for easy sharing.
Enjoy outside with salty air, sunshine, and absolutely zero regrets.
