For the Whipped Feta Spread

For the Sandwich

  • 12 oz Baguette
  • 2 tablespoon Olive Oil
  • 1 teaspoon Garlic Salt
  • 1 recipe Candied jalapeño whipped feta spread (above)
  • 3 cups Arugula
  • 2 large Peaches cut into wedges
  • ¼ cup Pickled Red Onions
  • 4 oz Prosciutto thinly sliced
  • ¼ cup Fresh basil roughly torn

Instructions
 

  • Add feta, Greek yogurt, olive oil, lemon juice, garlic, salt, and pepper to a food processor. Blend until mostly smooth and creamy. Stir in candied jalapeños by hand.
  • Split baguette in half and drizzle the cut sides with olive oil. Sprinkle with garlic salt. Broil oil-side up for a few minutes until golden and toasty. Remove from oven and cool slightly.
  • Spread a generous layer of whipped feta onto the interior of the toasted bread. Top with arugula, peach wedges, pickled red onions, prosciutto, and torn basil.
  • Wrap the sandwich in butcher, wax, or parchment paper to hold it together. Slice in half for easy sharing.
  • Enjoy outside with salty air, sunshine, and absolutely zero regrets.
