3 tablespoon Olive oil 1 large White Onion finely chopped 1 Bell Pepper finely chopped 5 cloves Garlic minced 1 teaspoon Cumin 1 teaspoon Oregano 1 large Bay Leaf 2 cups Jasmine Rice 2 cans Black Beans with their liquids - not rinsed or strained 2 cups Chicken Broth 1 tablespoon Red Wine Vinegar ¼ teaspoon Kosher salt

Add olive oil, onion, pepper, and a hefty pinch of salt to a large heavy-bottomed pot with a tight-fitting lid.
Once slightly browned, add garlic, cumin, and oregano and stir.
