One Pot Spinach Artichoke Orzo

This easy one pot spinach artichoke orzo is a simple pastas recipe that comes together in under 30 minutes. It’s the perfect side dish for a busy weeknight dinner.

Ingredients
  

  • 3 tablespoon Salted Butter divided
  • 1 tablespoon Olive Oil
  • 1 large Onion finely chopped
  • 4 cloves Garlic finely chopped
  • 1 12 oz jar Marinated Artichoke Hearts
  • 1.5 cups uncooked Orzo
  • 2 cups Veg Broth
  • 4 cups Fresh Spinach
  • 4 oz Cream Cheese
  • ½ cup Milk
  • 1 cup Parmigiano freshly grated
  • 2.5 cups Havarti divided
  • ½ medium lemon juiced
  • Salt and Pepper

Instructions
 

  • Add olive oil and butter to a heavy bottomed pan (I’m using a braiser) over medium heat. Once hot, add onion and garlic along with a pinch of salt and cook for 4-5 minutes.
  • Add the entire jar of marinated artichoke hearts and the juices/oils, the uncooked orzo and the stock and stir. Once simmering, put the lid on and let cook for about 6 minutes.
  • Remove lid and add cream cheese, parm, one cup havarti, milk and spinach. Put the lid back on and let the dish cook for 4 more minutes or until the pasta is Al dente and the spinach has wilted
  • Add lemon juice, another hefty pinch of salt, and a ton of fresh cracked pepper. Top with remaining shredded havarti and put under the broiler for a few minutes or until golden and bubbly.
