Make-Ahead Fluffy Egg Breakfast Sandwiches

These Make-Ahead Fluffy Egg Breakfast Sandwiches are a total lifesaver for busy mornings. Whether you’re wrangling kids out the door or just trying to feed yourself something better than dry cereal, these freezer-friendly sandwiches are here to save the day.

Ingredients
  

For the Fluffy Eggs

For the Kids

  • 4 Slices American Cheese

For the Adults

  • 3 tablespoon Caramelized Onion Jam
  • 3 tablespoon Precooked Bacon Crumbles
  • 6 oz Gruyère Cheese

Instructions
 

  • Preheat oven to 350°F. Place a small oven-safe bowl filled with about 1 cup of water in the oven to help create steam.
  • Add eggs, cottage cheese, cheddar cheese, kosher salt, and hot sauce to a tall bowl. Blend with an immersion blender until smooth.
  • Line a 7x10.5 inch baking dish with parchment paper and spray it with nonstick spray. Pour in the eggs and place in the oven.
  • Bake for 45 minutes, then remove and let cool slightly.
  • Cut the Hawaiian rolls in half horizontally. Place the baked eggs on the bottom half, then score to separate.
  • On one half, layer American cheese. On the other half, layer Gruyère, onion jam, and bacon.
  • Add the top half of the buns, press down gently, and cut into individual sandwiches.
  • Enjoy right away or wrap in foil and freeze for later. Check out the notes section below for my reheating instructions.

Notes

Here are my tips for reheating/mealprep:
From the fridge: These fluffy egg sandwich sliders reheat best when they're thawed in the fridge first. If you're starting from the freezer, just transfer them to the fridge the night before so they’re ready to go in the morning. When you’re ready to eat, place the foil-wrapped sandwich in the oven before preheating it to 350°F — this way they warm up together gradually. Check after 25–30 minutes. Alternatively, unwrap the sandwich, wrap it in a damp paper towel, and microwave on a plate for 30–45 seconds at a time until heated through.
From the freezer: You can bake them straight from frozen at 350°F for about 45 minutes to an hour with the foil on, then uncover for the last 2–3 minutes to let the tops toast up. You can also microwave them by wrapping in a damp paper towel and heating for 1–1.5 minutes, but this method is definitely best saved for busy mornings when you're short on time as the sandwiches could get rubbery and chewy from the microwave.
