How to make Fresh Mango Salad (Thai Inspired Recipe)

This Thai-inspired mango salad recipe is one of my favorite fresh summertime salads. This simple side dish is loaded with juicy mangoes, crisp vegetables, fresh herbs and a simple slightly spicy funky dressing.

Ingredients
  

For the Dressing

For the Mango Salad

  • 1 14 oz bag Shredded Coleslaw Mix (or about 6 cups of shredded cabbage)
  • 2 large Mangos julienned and divided
  • 1 large Red Bell Pepper cut into thin strips
  • 1 cup Cucumber quartered
  • ½ cup Green Onion finely chopped
  • 2 tablespoon Fresh Basil finely chopped
  • 1 tablespoon Fresh Mint finely chopped
  • 1 tablespoon Fresh Cilantro finely chopped
  • ½ cup Roasted Peanuts roughly chopped
  • ½ cup Crispy Fried Onion Bits

Instructions
 

For the Dressing

  • In a small bowl, add the lime juice, fish sauce, coconut aminos, sesame oil, coconut sugar, Thai chilis, minced garlic and a pinch of kosher salt. Whisk it together and set it aside.

For the Mango Salad

  • In a separate large bowl, add the shredded cabbage, half of whatever type of thinly sliced mango you prefer, chopped red bell peppers, chopped cucumbers, chopped fresh herbs and the crushed peanuts.
  • Drizzle the dressing over the top and toss everything together.
  • Before serving, top with the rest of the sliced mangos and the crunchy fried onion bits and a little more fresh basil on top for color but that's optional.
