Hot Honey Whipped Feta with Pickled Beets

Ingredients
  

  • 1 15oz jar Diced Pickled Beets such as Aunt Nellie’s
  • 1 medium Orange juiced and zested
  • 1 teaspoon Mint finely chopped
  • 1 tablespoon Basil finely chopped
  • 1 tablespoon Finishing Olive Oil
  • 1 pinch Flaky Salt
  • teaspoon Fresh Cracked Pepper
  • 1 8oz block Feta Cheese drained
  • ½ cup Greek Yogurt
  • 3 tablespoon Hot Honey
  • ½ medium Lemon juiced
  • Toasted Baguette or Crackers for dipping

Instructions
 

  • Add diced pickled beets to a small bowl. Add the zest and juice of one orange, mint, basil, olive oil, flaky salt, and fresh cracked pepper. Stir and let the mixture marinate.
  • In a blender or food processor, combine feta, Greek yogurt, and hot honey. Blend until smooth and creamy.
  • Transfer the whipped feta to a shallow serving bowl. Add lemon juice and a pinch of flaky salt to taste and stir.
  • Strain excess liquid from the pickled beets and place them in the center of the whipped feta.
  • Serve with toasted baguette or crackers for dipping. Enjoy!
